That's my biggest gripe with people's "PS1 demakes" is the lack of texture warping, instead they just make things low poly and pixelated. It's projects like these that make me appreciate it, every detail (minus frame rate, but that's not too important) is remade. Wish others went that far

There are settings to make it look smoother. Can't really recall but it had the old style VHS filter as well that you can disable and graphical or performance mode I believe. I always run with performance mode.
It would be super great, but unfortunately it is not possible. The game was made in Unreal Engine, it would be necessary to remake the whole game to meet the PS1 requirements.

I'm still happy OG Bloodbourne manages to have two badass bosses in the first area alone.

I like how the music in this format sounds more like a donkey kong boss fight more than a Bloodborne fight

Fan made. It's not the full base game (as of now), you can get some hours out of it for what it is.
