After you smoke them it’s also good when you wrap them in a foil pan with onion circles on top and put it in the oven

Only thing you did wrong was season the meat side first. ALWAYS season the meat side last for a perfect presentation
That mustard isn't necessary if you let the rub stand on the meat 5 minutes. I've never had a problem with the rub not adhering and prefer the additional smoke flavor I get without it.

It's not undercooked by safety standards, but they weren't quite cooked to most people's preferred pork rib doneness. Pretty sure you pull at 203-205.
I did the exact same thing as you except it was tasteless. I just used a bbq dry rub and mustard. It was fall off the bone tender but it was tasteless and I put a good layer on. Maybe different rub? I did the mustard but that’s just for rub to stick or flavor to seep in more I think. I’m not a cook but love to learn to cook new shit though
Hum… could you not taste the pork or the smoke? Strange. If you like a stronger flavor profile then absolutely go with your favorite BBQ rub.
I've messed up ribs plenty of times still do sometimes but I know what you mean super tender fall of the bone but no umph, it's a matter of how long you cooked it at what temp, I personally don't think you need to go super long only a couple hours at a higher temp should do it, because even though you think fall of the bone sounds better that's not always the case for ribs, you still want toughness, save the fall of the bone procedure for pulled pork or whatever
