  • Gary has won his share of Chili Cookoffs, so this is worth the watch! Even if you have your favorite chili recipe, check this out for a few tips you may not be familiar with. Great cold weather or anytime recipe!
    Ingredients:
    3 lbs ground beef, drained
    1/2 cup red wine vinegar
    One Large Bell Pepper finely diced
    One Onion finely diced. Both sautéed until soft, Salting vegetables
    1 30 oz. can Chili Beans
    2 Cans diced tomatoes
    1 can drained Kidney Beans
    About 32 oz. Tomato Juice
    Carroll Shelby Chili Kit (contains chili pepper, cumin, garlic and other spices)
    Use the cayenne pepper packet if you like your chili hotter. The masa flour packet is to thicken your chili. All personal preferences.
    Combine, ENJOY!

    I made this chili and it came out fantastic! First time making chili. My changes: I added a huge can of corn and I smoked chicken wings on my smoker and then put all the chicken in the chili mix and put back on smoker for another 3 hours. It was a chili cookoff and I won most original with LOTS of compliments!! Thank you!!

    Hello, let me tell ya'll something. I originally tried this recipe because I saw how others were saying not to be rude to him. But his, this man right here is on to something. I made his chili, and let a coworker taste. She just kept saying oh lord. This recipe really is a great one to follow, no wonder he got an award. Thanks Sir. for sharing your recipe. It was outstanding.

      @@So_So_Good I was looking to make a good batch & I happened to buy the same ingredients you feature in this recipe. I know how to make chili but I don’t usually use ground beef or beans.     I can see why this is an award winner! Finally a recipe where folks don’t skimp on ingredients or add water as the base. I do prefer to use broth and fire roasted tomatoes for that extra kick but I’ll have to give this a go one night. Thank you so much for sharing your recipe. It looks so hearty!

    I made it EXACTLY how you did and ohhhh mannnn so full of flavor and texture and deliciousness! Nobody could believe I made it! They thought I special ordered it??? Lol I am not sure if that’s a compliment or not but the big whole pot was gone in no time flat!!!! Now what does that tell you???? DELICIOUSNESS DELIVERED!!!!❤

    Absolutely the BEST chili recipe I have tasted and have had some great recipes, prior. Super easy preparation and, yes, you are right on the fine-dicing of the onion and pepper. It makes a huge difference. Thank you for your recipe and this informative lesson!

    I made this last night and I LOVED IT!! It was so easy and quick too!! I used V-8 and it was awesome! I left out the vinegar as I am not a vinegar person...at ALL! I used the whole cayenne packet in the Shelby box and had to add more, yum! I did not cook for hours but only about a half hour and it came out delightful! I will make cornbread today, to eat with my excellent chili, it is a great recipe!. Thank you!

    Sir, your recipe is exactly what i imagined chili to taste like!
    I’ve tried many recipes for chili, and this by far is the best! All i did was add bacon and sautéed the onions, pepper and garlic in the bacon grease, and my family likes to have sausage in the chili. Thank you, for sharing!
    I love Texas-chili too, but some of these folks in the comments are some real clowns.

    Just made Mr. Watkins chili.... I was surprised by it's simplicity, but I must say it's pretty good.... I've made chili a lot of chili over the years but this will be my new base starter. Yes, I will add garlic, cayenne and green chilies, etc... Hat's off to you Mr. Watkins! You make a good chili !

      Well, if you wanna get technical, unless your making you own diced tomatoes, tomato sauce, etc... every chili is kind of using somebody else's ingredients! Hats off to this gentleman for sharing knowledge of past trials!

    I have a secret ingredient that I learned from patronizing Skyline Chili here in Florida; add a tablespoon of cocoa powder to the pot. It's wonderful! I knew that peppers and chocolate paired well together it just never dawned in me to combine them in chili before. It adds a warmth and depth to the chili that i really miss whenever i eat chili without cocoa powder in it. I highly recommend it.

    The dude is correct, this chili is frigging awesome! I used V8 because I like drinking that more than tomato juice. The vinegar adds a special "something" also. I threw in a Tbl of my homemade chili powder, I'm used to powerful stuff :). VERY VERY GOOD!!!! Paired with homemade cornbread made with cream corn and buttermilk.

    My father loved to make chili. I don't know his recipe but he told me that which ever way you cook it there was his "secret ingredient" that would make any ones chili taste better. When he cooked his chili, just as it got done he would add a heaping table spoon of PEANUT BUTTER to it. PB is a legume and it adds a very faint taste of sweetness while it brings out the taste of the beans. It works great in chili with no beans also. Give it a try and you will be pleasantly surprised.

    Vinegar is the key, I love it in my chili. I use balsamic vinegar in mine. My chili is almost exactly the same as yours! Great recipe!

      It looks delicious and I'm sure it is, however dumping cans of already cooked beans is not really a "recipe". But I suppose that by american standards it is an award winning dish.

    I have used Carroll Shelby’s chili seasoning since the 80’s also. I love adding the cayenne pepper packet, i can use the whole packet, but when my grandchildren are over, i use just a pinch. It has the best spices, and as you said “ the perfect amount of seasoning, especially cumin, and that makes it taste amazing!
    It is getting the time of year we do chili, hotdogs over a fire, slaw, and for desert: roasted marshmallows. We cut sticks about 4 ft long from hardwood trees, burn the ends we sharpen to slide the hotdogs and marshmallows on, and roast them slowly. Makes great chili dogs!!!!

    I have been cooking chili for forty years and this is the best recipe yet. By far! I've made my own chili powder by toasting and grinding dried peppers and all that jazz. But that Carrol Shelby's mixture is perfect. I will never use another chili powder again. Thank you so much for sharing this, Gary. You have changed my chili-cooking ways!

      @@Lettuce-and-Tomatoes No i use a secret concoction and ultimate herbs and spices only that of the elder gods know. Then i eat a handful of elderberries to summon the knowledge of the gods to bless me with the spoon of infinite wisdom. After many hours of alchemic concotions of outterworldy epicness, and chants of elder tounge I then have the chili blessed by the elder gods.

    I've been using this chili for years. Carrol Shelby deserves the credit for making the best chili kit out there. The kit tells you to add other things you like. I always add the onion, green pepper, pinto beans, and dice tomatoes .l use real chuck steak or sirloin meat chunks instead of ground beef. It always turns out great! Serve it with cheddar cheese and sour cream and your in heaven!

    Looks wonderful. I usually soak red beans overnight and then boil them until soft separately from the seasoned protein, veggies, and spices. I then remove the soft beans from the water to add to the tomato based stew and adjust the seasonings. I also like to add smoked paprika and cloves. Soaking the beans begins the growing process, which increases the nutritional value.

    I'm glad to see someone else use vinegar in their chili. I've been doing that for years but have been using the natural apple cider vinegar, Bragg's brand "with the mother". I look forward to trying your recipe soon! Thank you for the video!

      Looks killer. I’ve always used the vinegar in the big cans of pickled whole jalapeños. I transfer them into a glass jar and use the juice in my cooking. Soups stews, bean soups, and especially chili! I like Shelby’s but I LOVE “Wick Fowlers 2Alarm” ( I make mine 3 alarm ) for a real bowl of Texas Red…
      But I must admit, Shelby’s is no slouch either…

      I just use steak sauce, which already has vinegar in it... Plus a bunch of other yummy good stuff (sugar, spices, etc.).

    Sir....when I saw your "award winning" title I thought, "Oh man...another guy with some super special *secret* recipe that he takes around the country trying to realize some lifelong dream....." But then, as I saw you create your masterpiece I was AMAZED by how similar your recipe is to the one I developed about 20 years ago!! "Finally!" I thought....someone who understands that the best chili is made with simple, basic - but AWESOME - ingredients! Our approach is almost identical. Two minor differences: I don't use red wine vinegar, but I do add a splash of red wine or apple cider vinegar. Instead of the Shelby seasoning I use the original McCormick. And rather than the tomato juice I use tomato sauce. Other than that, we cook the same chili! Thank you for validating my approach and giving me a couple great ideas!

      @@robertpatterson3321 I didn't mean to offend, Mr. Patterson. And certainly my goal is not to promote my own recipe. I'm a simple man who just cooks for his family and friends. The recipe featured in this video is incredibly close to my heart, because it's so similar to how my dad cooked chili. Unfortunately, he passed away from brain cancer 3 months ago, and he never shared his "secret" with me. So I was just listing the ways my attempt at Dad's recipe differed from what was featured in this fine video. I'm sorry if I came across too strong. Certainly it wasn't what I intended. God Bless.

      @@jakemitchell1671 Don't worry, Robert was just being "sour grapes."
      My chili recipe isn't "exactly the same" as his either, but it's pretty damn similar too, spiritually, in some of the things it uses. So, who gives a damn if it's not "exactly the same." No two recipes are gonna' be "exactly the same," nor should they need to be, in order to be "similar."
      Mr "holier-than-thou" / "sour grapes" can pretty much just sod off and go work out his anger issues someplace else... This ain't the forum for that. We're just enjoying sharing good chili recipes, tips, and tricks.
      Like, to me, small red beans & black beans are better than kidney beans (which, IMO are a bit too gritty), and I use spaghetti sauce as opposed to tomato juice for the tomato base/stock (but it's the same basic concept), and I use steak sauce instead of vinegar (adapted from an old Lea & Perrin's recipe like "meat skillet," or something, which I've edited and upgraded bit by bit into chili over the years), but the steak sauce has vinegar as one of its main ingredients, so fills the same basic function. So, there's definitely a lot of parallels with what he's doing. And I definitely recognize how I make chili in how he makes chili. Is mine exactly the same? Heck no. Not claiming it is. Is it pretty spiritually similar with a similar end product? Heck yeah! And it's delicious... Haven't made it proper in a while, but maybe I will soon. Yum! ^_^

      If you're too chicken to add vinegar directly, add like a quarter cup of steak sauce. Yum! It has a little bit of vinegar, a bit of sugar various spices, etc. Gives it a little extra tangy kick. ^_^

    I made this, I have a huge pot and we freeze a lot, so I doubled your recipe, and used 2 lrg cans of V8, fantastic my friend, I have been using Caroll Shelby for about 5 years now, the only thing I do different, is I chop about 5 tbls of jalepeno`s I can every year, we like heat, outstanding sir.

    I like your recipe, I make mine similar but instead of tomato juice, I use V-8. I make very thick chili and the V-8 helps thin it just a little and it keeps the tomato flavor going. I also use garlic. Thank you for sharing!

      Spaghetti sauce also works well. And you can get a can/jar for like a buck. As you say, it helps thin it out a bit at the end, add a little extra liquid to simmer in, and makes a nice tomato-y "base"/"stock" that incorporates the other ingredients / flavors as it simmers. [IMO, even better the next day after it's steeped overnight and all combined.]

    Best tip I'd give is to really brown the meat. That goes for any recipe with ground beef. So much more flavor. Not a barely cooked light brown, but dark with crusty bits, more like a smashed burger. Mix up a 1/2 tsp of baking soda, 1 Tbsp of water and 1lb of ground beef and let sit for 15 minutes before cooking.

      Hey, you know my secret... ;) Lea & Perrin's [in my case, their **steak sauce** ;) ] gives it a little extra kick. [Or, A-1, since local stores don't seem to carry Lea & Perrin's steak sauce anymore (though they still have their Worcestershire) for whatever reason, which is annoying...]
      I put in a bit when browning the meat and a bit after adding the spaghetti sauce [as the tomato base/stock] at the end. Yummy stuff! Adapted from an old Lea & Perrin's recipe that's lost to time, but I think it was called "meat skillet" or something. And I've evolved it over a few decades into a chili recipe of my own. But, yeah, that steak sauce kinda' makes it for me. ^_^

      Spaghetti sauce also works as a really easy "tomato base" to simmer it all in at the end. And you can get a jar or a can for like a buck. So, super cheap addition.

    Funny you mention the chili cook-off in HB. I was there a few years ago in June. While sitting at the Aloha talking to a local they shut the street down and he said they were doing a chili cook-off. I live in Michigan and we do ours in the winter and I thought it was so cool being able to attend the local chili cook-off there during my visit during "June gloom"

      Nice! Try a Bloody Mary mix that’s popular in your area. You can use that instead of vinegar as it has some in. Adds a nice zing!

    I just made your recipe with a few changes, I traded kidney beans for black beans, red wine vinegar for balsamic, and one of the cans of tomatoes had peppers. I also slow cooked everything in my crock pot. I used different seasoning packets and cornstarch instead of the packet you suggested. I really love this recipe, its very different than I'm used to. My only complaint is I should've used less of the balsamic and should've cooked the meat separately to control the amount of grease, even then, it's a great chili considering I didnt follow the recipe, next time I definitely will! Thank you for sharing!!

      Definitely prefer small red beans and black beans over kidney beans. IMO, kidney beans give it a kind of tougher/grittier texture I don't much care for (I used to us them, but decided I like the texture and mouth-feel of small red better than kidney beans).

    I have made this chili multiple times now, it is the best chili I have ever had. 🙌🏼 I brown my beef and onion/pepper, then assemble in the crockpot and leave on low all day. Perfection!

    loved your video - i've never tried red wine & bell pepper and will give your recipe a try. I also make my own chili & beans - make my own tomato sauce from diced fresh tomatoes with tomato paste, sautéed onions & garlic, dried kidney beans soaked in water the night before, and cumin powder, salt & pepper - slow cook overnight thus chili beans for breakfast haha

      Well…sounds like it was just a contest at a local bar. I mean, it looks very similar to what I do but with French’a chili packet and brooks chili beans…but I would never think to enter it in a contest. It’s a very good “everyday man’s” sort of chili. But I wouldnt think contest worthy. I would think serious chili contest would have limitations on the use of prepackaged type stuff

      It depends on the local rules. Most Texas Chili Cook-offs don't allow beans... You'll always hear someone yelling,
      "Beans are served WITH chili, NOT in the chili!" --- Yeah.., like I said, local rules.
      Personally-? I can't imagine chili without beans, even though I've lived and worked in Texas. I believe it's all about what you grew up with. I grew up eating chili with beans... I like beans. All kinds of beans. Cooked all kinds of ways. Including my favorite --- Seasoned with ground beef, onions, garlic, tomatoes and homemade chili seasonings, or Carrol Shelby's... LOL!

    I saved the video and I may try it. I’m not a fan of chili in my beans, lol I make the best red bean in the state but I also have a chili recipe that was given to me by my grandpa that was passed down from his dad. It’s kinda cool you can go back and see where each one has wrote or made different changes over the years. When I make it, it’s an all day event. Not one thing comes from a can or package it’s all hand ground from the venison to the coco. My papa always said the best way to eat his chili was to wash it down with his moonshine and saltine’s. And yes he also taught he to make his shine… lol I loved that old man.

      Sometime, in place of "sugar," try adding like a quarter cup [or so? (+/-) I just eyeball it, really ] of steak sauce (Lea & Perrin's or A-1)... It's got plenty of sugar in it, and also a bit of vinegar, some spices, etc. IMO, it works pretty well in chili to tang it up a bit and give it that little something extra.
