My family owns a birria restaurant in Amatlan de cañas Nayarit. Birria Oropeza where they sell birria only for 65 years. Their birria is at its best. They raise their animals, cook over clay and brick old century ovens. Select premium tomatoes and perfect mix of spices. Hopefully some day you can visit my home town Amatlan de Cañas Nay and try their Delicious Birria 😋
Goat Birria is from Michoacan. My mom makes the best goat birria. You can drink her birria consume straight. For my sister's quinceañera, my mom bought two goats. She marinated it for three days. She put them in a huge pot then in a brick-lined pit. 6 hours later dinner time.
The traditional Birria is from Los Altos de Jalisco, it is cooked in an underground oven, the meat is protected with maguey leaves and is part of the taste, spices are added for a tasty stew with the meat juices, goat, sheep, or beef can be used for this heavenly dish from Jalisco. We r from Los Altos de Jalisco, (God's country), where it originated. The best Birria I ever had, was in Guadalajara. It was the soupy style. It was in a lil restaurant near El mercado de San Juan. You can get good Birria in the South West of USA, but it's usually a restaurant that specializes in it.
Birria is a regional dish from the state of Jalisco, hence its popularity there. I personally like beef birria better than goat (too gamy for my taste).

Next time definitely get the consommé for dipping, think of the barría like a french dip sandwich . Some places dip the entire taco before serving it. Glad you liked it! ☮️❤️😎
My favorite place in Mexico city growing up was with consome on the side and the tacos were on a corn tortilla, no grease, no grease at all on the tortilla. Delicious place in a tianguis in Churubusco (street market)
There is a wonderful Birria stand in PV by Hotel Rosita. The Crispy Tacos are great! Hot and come with the consommé. Its the perfect food when you have a cold, the spice is perfect! Haha.
I love birria and I’m glad you finally experienced it. My favorite tacos are quesobirria tacos with consomé. Very delicious and rich. Last year when we were staying in Bucerias we were on a morning walk in the GZ and there was a line around a guy’s pickup truck. We were curious what was goings on. He was selling birria tacos with consomé and he had quite a following, so we were brave and grabbed a few. And here we were two gringos sitting down on the curb eating these delicious tacos! Great memories! We’ll be back to the ZR IN PV and the GZ in Bucerias in July and I’ll be in search of birria tacos again!
The best birria is goat meat and it's barbequed underground for like 12 hours and it's wrapped with aluminum foil with cactus on top and maguey to make the taste better. My parents are from Zacatecas and in the southern part of the state is were the best birria is at, they don't do dipping sauce you have the birria with rice and salsa on it and if you want it spicy you add picante which is a hot salsa that is made for birria. I can only respond to what I have tasted and it is the best style. So it can be a state thing but also a regional thing, northern Zacatecas and southern Zacatecas have 2 different styles; Juchipila is the name of the town and the food there is great!!
We have a little Mexican restaurant here in northern Colorado that specializes in birría and I tell you, it is goooooood!! The kind server spoke no English..a good sign!!

Yes, you definitely need to dip it in the consommé or the juice the meat was cooked in. I had it in Baja, and you sprinkle goodies on top of the consommé like cilantro, raw onions If you like them (I don’t), sliced radishes and shredded cabbage.
I discovered birria earlier this year in Sayu. There's a little husband and wife team (his name is Sam) that set up shop in the main square on C. Marlin in front of Mini Super La Cubeta. I think they're there 5 or 6 days a week from around 7am or or 8am until early afternoon. And the consume, oh the consume LOVE it! There's also usually a temporary birria stand across the bridge on the road at approximately 22 Av. Revolucion.
Best Birria in Jocotepec ! We were blown away with how delicious it was ! Served right next to the plaza! Best tacos at Taqueria Pillo in Ajijic heading towards 6 corners but close to us...a hole in the wall where locals go ...even late at night ❤
I've never seen you eating canastas. They're a premier breakfast street food in CDMX, but less so elsewhere. Cheap eats for sure at 10-15 MXN each. The vendors pack a basket full of tacos usual consisting of beans or potatoes in a corn shell and drenched in steaming hot consome.
Interesting. I can't remember the last time I had dry carnitas. Maybe try several venues / stands. But you can't go wrong with Birria quesatacos and quesabirria. I still can't live without Carnitas Tacos.

Gotta dunk the birria tacos in the consomme, it's a must. Keep eating more carne tacos Hilary. I suggest suadero, carne asada, al pastor, barbacoa, pescado, y guisado tacos. And if you're feeling adventurous, try cabeza & lengua tacos.
Birria and Barbacoa are pretty much the same thing, except one is goat and one is beef. You can order it as a soup (wet) or on a plate dry, tacos, etc). Generally the meat is seasoned in its own juices or made with a chili sauce (how it is made tends to vary according to region).
I'm surprised that you never ate at Birria Chanfay in PV. That was one of my favorite places to eat a morning taco. Usually ate at leas 2-3 times during a week stay in PV. Also love the taco stands next to the Farmacia Guadajara and Marisma Fish Tacos. Boy I miss the street tacos in PV.

It's not disappointing that you like carnitas better. Those of us from Michoacan know the carnitas are better when they are made by someone that knows what ingredients to use.
Speaking of pharmacies , it doesn't require a prescription for some things like some penicillins to verrry effectively fight the cold / flu . Worked for years . Also is the quesadilla the huge one and it would take two to fill you ? If quesadilla is the huge one seen in the video then you've got huge appetite but yeah a lil pricey
Hillary needs to try some other "Birriarias:.Birriaria is a great word to practice rolling your rr's BTW.Normally they come in corn tortillas and are dipped in the birria sauce then cooled on the grill,then dipped in the consome.The quesadilla version did look good but I think you guys need to hit a few other places up before making final judgement.
Maybe the pre-made birria tacos were old. Those should be made to order. They are normally amazing. ..and you must have the consume. Also carnitas are not normally dry. The best carnitas is in Michoacan. Also, if in Guadalajara try carne en su jugo.
I usually like my carnitas that are juicier. But...Because they are oily. Next time try them more oily. I think you'll enjoy them more. Of course they're more unhealthier. Never ate quesadilla birria. I'll try that soon.
To my humble opinion, the best birria is made out of goat. It has to be served in a bowl, with plenty of caldo and with home made tortillas. Oh! remember to add lime juice and hot salsa. Deliciosa!!!!
That quesabirria looks like it has been sitting around for a while. You need to get one fresh. And it should have been served to you freshly made alongside a dipping cup of consome. I've had much better. Give it a shot again somewhere else, I think. :)
My little brother came to visit me and he speaks exactly zero spanish and it was his first time to even leave the state he was born in. I took him to a local place to get some dank birria tacos and he loved them. Randomly, and I really don't know why, I said "I'm glad you liked it bro. I was a bit worried you wouldn't though. It was hard for me the first time I ate dog but that stuff is dank so who cares". He really thought it was dog until his girlfriend got back and told him it wasn't 😂

It could seem a little strange that Farmacia Similares always play music in their Drugstores but it's a well proved publicity strategy. I'm a publicist myself and I find it strange in my early days but it's proved that the businesses or stores that have music playing get more costumers than the ones they aren't.
