Ye. It's not bad at all but it should be goat meat. It really does open a discussion on how much a recipe can be innovated and evolve before it becomes something new. I figure changing the protein is dramatic enough to make that change
Birria is actually really easy to make..I'm curious as to different mixtures of chili pods that can be used to change the flavor. I tossed in a chipotle in adobo sauce and it kinda added a paprika kinda smokey flavor. I've also used a pressure cooker instead and u can just turn any shit cut of meat into fall apart. I think the leanest cuts u can find the better, less fat but same flavor
The first time I had birria tacos was freshman year of college when I went to the dorm community kitchen at 1am and there was a drunk Mexican chick making them, wearing a cowboy hat

good news is that cuts of meat he's using are supposed to be extra cheap. bad news is I've never even seen these cuts of meat sold, we only get liver, tenderloin, if it's a pork also ribs, and if it's a chicken, there's wider variety, but oxtail? yeah right, unicorn butt

Great job
Why is Birria so popular all the sudden? I swear I've started to see these all over in the past month or two.
Because birria is amazing. As to why few people in the US knew about them, I don’t know. I only first heard of them a few years ago.
Damn those really are the best. Can’t imagine better and cooked perfectly
The recipe is really good but I would recommend just doing only chuck or only short rib as buying pieces for each type of cut is pretty pricey
Forget the price. Treat yaself, don't cheat yaself 💯
Shhhh birria is for occasion only make it when you can afford chuck already expensive as is
Seems like overkill, especially when it is just going to get mushed. But, I would throw some cheeks in there if we going all out.
