    Here is a mesmerizing video of how sugarcane is turned to jaggery.
    One thing that I witnessed while filming this video was the bleaching agents used while making jaggery. Very few producers use natural agents during purification.
    All jaggery you get in the market (organic or otherwise) is bleached with chemicals.
    We all think that jaggery is very healthy. "Healthy" becomes a relative term here.
    Here are the bleaching agents used while making jaggery
    calcium hydroxide
    sodium hydrosulphite (hydrose) (Most commonly used) - Its commonly used in tanning and paper industries.
    sodium formaldehyde sulfoxylate (safolite)
    oil and lime
    artificial food coloring etc...
    The main thing about adding these is to get the desired colour.
    The producer with whom I had a chat had to say the following:
    Light coloured jaggery = higher chemicals used - He says that people always associate light coloured jaggery as tastier and appealing.
    Also have you noticed that when you store jaggery, sometimes it becomes moist and has a sort of soft and liquidy texture.
    These sodium based chemicals reduce the shelf life of jaggery since sodium is hygroscopic - meaning it absorbs moisture from air.
    If your jaggery is becoming too soft, it just means that its treated with a lot of chemicals.
    Be informed about where you source your ingredients.
