As a farmer we have conscious and take utmost care in preparing the jaggery. It is a very hard work. Cutting the sugar cane removing the leaf and bring it crushing spot for juice. Then boil the juice till it comes to expected consistency. Then transfer it to cool down wooden rectangle vessel. Tilt it to cool then crush it with wooden log, fill it in the jute bags. Here all are eco friendly. One should go and see the process involved. Or work in them. ( A retired Librarian also from a University).

To all those people who are concerned about the workers footwear and poor hygiene... 1. The temperature of the boiling sugar solution is between 140-180 degrees and the whole room and the floor gets heated insanely in this process. Can you imagine anyone walking there barefoot? 2. At this high temperature any bacteria, fungus or even fungal spores would not survive 3. High sugar also inhibits growth of bacteria and fungi that's why we use sugar as a natural preservative in some foods 4. The person was walking on the area from where Jaggery was already taken not on the food itself and he had to wear chappal because the temperature of melt jaggery is all around 50-60 degrees. 5. Lastly, this is the traditional process which is now a days almost outdated. Now a days even jaggery is made in a small factory with semi or fully automatic machines.
Umm...wait for it to cool? Or wear some protective shoes instead of the same slippers you wear to the loo? The solutions are are never ending stop defending la k of hygiene you stinker.

It's gross! And I just bought a whole container a week or so ago 😞. Since we know the process now, I think it's easy to make at home. Just buy sugar cane, wash it, juice it and cook it until ready. That would be much cleaner version.

This is the traditional method, what perhaps was being done some 100's of years back - i, to a certain extent, agree about the hygene factor, however, this is a undisguised (raw) version....remember, these workers are poor..this jaggery comes cheap, and its also organic, under any organic brand, you might pay 10 times more - take your call, if i were given the choice between a traditional and factory made, i would go for the traditional jaggery
They dont wash the Sugar canes neither the machines so I believe it has got lot of minerals with dirty germs unseen . Its a common practice in the Subcontinent. We lack Hygiene and are far away from cleanliness.

can you tell me what is the more healthy correct process of making jaggery and what is the wrong method .because jaggery nowadays r getting spoilt in a preparation of food fast in 2 or 3 days itself .it is particularly asked as it will be benefitting for temples or any place of worship offering prasads and for many home makers with this frequent complaint .
