    Hej! What would be german Translation for "cure"? Can i use Nitritpökelsalz? I have seen recipes without cure, but pure salt 30g / Kilo.
    Looks a cellar will be best place to dry it? Inst-Abo :)

      Hey Volker, NPS is fine just add the amount of salt and cure together and use NPS instead

      natural fermented and dried not raw its ok but better flavour when its cooked (many ways)

    great video! you dont need an additive for drying, that excessive amount of spices acts like cure (as long as the environment is optimal).
