Hej! What would be german Translation for "cure"? Can i use Nitritpökelsalz? I have seen recipes without cure, but pure salt 30g / Kilo. Looks a cellar will be best place to dry it? Inst-Abo :)
Hey Volker, NPS is fine just add the amount of salt and cure together and use NPS instead
