    Gretchen, I'm really liking this longer format. I like hearing you explaining things and I also like that you , the expert, are learning too (like cutting the cake out of the sheet pan). I'm also really happy that you have added ads to your videos because you deserve to be compensated for all your fabulous hard work.

    Gorgeous. Thank you for opening me back up to patisserie, as a pastry chef since becoming vegan for some reason I thought I had to demolish the idea of French patisserie and couldn’t wrap my head around it! Now I see the light, ily Gretchen!

    Thank you so much for all your wonderful videos and recipes. I have many allergies and have to make most of my food. I try other vegan recipes but they are not like yours. I wish I lived closer I would go to your bakery all the time, but since I am not I am so thankful that you share your recipes. I am sure they are not as good as yours but it really ups my game. Thank you thank you.

    Not really, fraîse is strawberry. You say fraisier gatêau because it's a cake full of strawberries, it would be literally translated as a "strawberried cake". 😅 And what matters is the recipe 😊 The pronounciation is very difficult to explain here in the comments since we can't add sound. 🙂 What a beautiful cake, great job as usual 😊👏❤

    Don't know if this helps but my mum made marzipan from scratch, used blanched almonds and almond extract, other ingredients too, like glycerine. Traditional German recipe that would be easy to find, though a lot more work than just buying almond paste.

    What a relaxing video to watch. You really make this one look so manageable. I have a great idea for a classic cake you could make for your series. It's called Donauwelle (Danube wave). It is delicious and something like a Schwarzwald Torte (black forest cake) or like a tiramisu. Light, fluffy, creamy, and topped with cocao powder. Mmmm

    Hi Gretchen! Love this recipe, currently making it. I found the silk brand heavy whipping cream. Do I just whip it up or is there a recipe?

      Just whip it! I go to medium peaks, it stiffens as it sits in the refrigerator, so be sure not to overwhip

      Hi 👋🏻 no i did not (and do not) I’ve not had great luck with homemade coconut oil based butter in my recipes 😕

    Excited to try this!! In the UK you can buy vegan Elmea double whipping cream (it does whip into very similar consistency as the non-vegan one). Would this work instead of the coconut whipped cream or do you think only coconut would firm up this well? Thanks!

      Sounds like the SILK brand that I use! If it whips like whipped cream & tastes like whipped cream...I say USE IT! :D

    I really appreciate how much effort and attention to detail goes into your tutorials, it’s so rare to find classic cakes veganized from someone with professional training! BTW, there is a video on youtube called "how to pronounce fraisier (correctly)" it sounds roughly like frez-yeh 🍓

    This cake is so pretty, and delicious, but it brings sad memories to me. It was my first real heartbreak, on my birthday. I remember crying while making this cake, I remember tears falling into the cream and having to start over. I remember how painful it was to bake a cake and be presentable for my birthday party while just being an absolute mess. I used to love a good fraiser but now I hate it

      Thank you! NO you are not blind, thanks for pointing that out! I recently implemented a "jump to recipe" button on my website and it is seriously messing with my recipes! Uggh! What a nightmare! I will update it now, But the amount is 2 cups of whipped cream I often use SILK which would be 1 whole carton whipped but I can't seem to get it anymore near me. So whatever you use is fine you will need 2 cups of total whipped up volume
