Vegan Lemon Raspberry Cake | Chef Ani

- It is hard to believe it is July already. Summer has really settled here in New England, and maybe because we have such a short season, we are outside more, appreciating the beauty all around. With the 4th of July in just a couple of days, I thought I would make a Vegan Lemon Raspberry Cake, a perfect way to celebrate this important day.
My dad loves this cake. The other day he told me this vegan lemon raspberry cake was a "lick-the-plate" kind of cake. I love it too! You can be so creative when decorating this cake. You can add some blueberries and make it a red, white, and blue cake for the 4th, or you can decorate it with lemons and mint for a different look. I chose to decorate with raspberries and mint this time. It is Raspberry Season, and the berries are large, sweet, juicy, and flavorful. What a perfect time to make a Raspberry Cake.

Our 25th anniversary is this year and for our wedding cake we had lemon poppyseed with layers of raspberry jam and cream cheese frosting. People came up and said it was the best cake they have ever had! Anyway I think this will be even better because it’s all plant based, thank you!

With the summer days being warmer and the virus cases decreasing in my state, I've been enjoying long walks with the dog. Much needed after being locked up for so long. It's good to finally breathe in that fresh air thru my face mask.

This is definitely scrumptious. I am New to baking and New to vegan products but would love to try.
Which earth balance margarine would you suggest for baking ??
For the icing: I like to use the Earth Balance Original mixed with Spectrum Shortening. This makes the best frosting. I whip it for 10 minutes so that the frosting is light and fluffy. Happy baking!

My 8 year old made this for her birthday today., all by herself. She had a question though. The icing is just way too sweet for us. We are used to really low sugar. Any suggestions for making a less sweet icing? We never use powdered sugar and I think it was just a sugar shock. She followed the icing recipe exactly. We usually use maple syrup in our icings- very little amounts but not sure how to make that work for this cake. Thanks again!

Hi Ani. Can you share what type of Rose Water you used? Having trouble knowing which type. There are rose water extracts and rose water for body? And some international brands of rose water that doesn’t say for baking? Thx

Hi Chef Ani. Wow very nice cake. Please I want to this cake for my daughter turning 12 on 2 nd of June and her sister truning 5 on the same day. So yess each year I have to bake two birthday cakes and other sweet biscuits etc. I just seen your video and I was looking for a cake easy to bake and that is high. She wants a pink and gold drip. Girly cake. But please can you tell how. To the Recipe in grams. Please help me.

Good question! The apple sauce helps the cake stay moist. It works really well in this cake.
I just made this cake for my birthday and the cake it’s delicious but the frosting doesn’t hold it’s shape and my cake is falling down. I did everything according to the recipe. I also assembled it using her tips, putting the layers and the freezer and all that. But unfortunately as soon as I took them out of the freezer the frosting was melting. :( the cake is very delicious tho.
I am so sorry to hear that! That is really strange, could be the temperature or humidity. When the frosting is a bit soft add more powdered sugar. Again, I am so sorry it did not work for you.
Chef Ani thank you so much for replying to me, I think maybe the heater in my kitchen was to warm maybe. I did have to add more powdered to the “buttercream “ to have the correct texture. And I left it in the fridge for one day too. I did take it out of the fridge like for 30 min before I started assembling the cake, I think that was my mistake. But, I have to tell you that this cake is the most delicious cake I’ve ever eaten! I will have to make another one to see if I can finish it properly lol.
