Hello Roger, thank you so much for posting these videos. My family and I are really enjoying watching them and have benefitted from from the knowledge you generously share. You have inspired us to go out fishing more often together as a family. In fact, we recently came home with a catch of flathead and Australian Salmon (correctly dispatched and bled). Your beer batter recipe is simple and the result was absolutely delicious. To my surprise, the Australian Salmon was excellent, and 2 of my 3 kids actually preferred it to the flathead. How good is that? 👍🏼😃👍🏼
Thank you so much roger for this recipe my dad didn’t think it was gonna be good and I said we have to try it we make it and it’s soo delicious and my dad loved and my mum loved it so thank you 🎉
Roger, I have an updated pc, I could smell the crispy fish. I'm a new fan of someone who is down to earth with the basics without fanfare. I'm a little older than you, so I can appreciate your personal touch to your fishing techniques. Keep up your great presentation and mostly your knowledge of fishing. I live in the states so I interpret your language. Bart.
Roger, I can’t wait to try your beer batter on red tail perch we catch from the surf off Northern California. That is once we allowed to get back on the beaches again. Covid19 you know. From one fisherman to another, good job Roger. Excellent video. Thanks Mate.
🍺 +🎣 + 🍽 - my 3 favourite things ! Life is pretty good when you can combine all 3 ! Thanks for the video Roger ! For some strange reason i now have this insatiable craving for deep fried Flathead fillets !
I live in North Cornwall, Rock, U.K and today purchased 2 local caught cod fillets.. I made your recipe for the beer batter and hope it's just like yours tonight. Blessings and many thanks for such an easy recipe.
A suggestion. Instead of drying the fish after rinsing, try seasoning the fish directly, then dredging it in flour and letting it sit up for 10 minutes.. The flour and water will make for a tacky surface which makes the batter stick even better to the fish. And a tip someone gave me on deep frying a couple of years ago. You can deep fry damn near ANYTHING in a wok! They make such great vessels for deep frying! I used to have a 'deep fryer' machine. I threw that grody sucker away!
Fantastic recipe mate I use exactly the same but I add a little rice flour RICE FLOUR not starch the rice flour gives a thicker batter like the old British fish and chips but I prefer your recipe as it’s light and makes the flavour of tje fish shine thanks mate
Roger if you can chill the batter in the fridge before using the batter seals immediately and no oil will penetrate the batter. Place chilled and unchilled batter fillets on kitchen paper after cooking and you will be amazed at complete lack of oil on the paper from chilled batter fillets. Taste better
If you have a ready access to ice, maybe a home ice-maker, you can go the “extra yard” and sit the batter bowel inside a larger bowel that is filled with ice. Most beer- battered fish served in good restaurants is done this way. Another trade secret, they don’t use beer in beer-battered fish, they use icy cold soda water. It makes for a far better batter.
Used this recipe after catching a nice flathead using yabbies and it's awesomely easy and crunch it does . Thanks for the tips on yabby pumping , putting yabby on the hook was easy after your tips and a bit of practice , and a nice day in hat head creek resulted in a 50 cm male flathead , love your work
Most of the time I do catch and release, but I just tried this simple recipe on some mangrove snapper and it was awesome, no big mess afterwards, just a full belly, ty very much Roger.
I find that if you kill them quickly, bleed and ice them, and cut out the bulk of the dark red meat when filleting, Australian Salmon are magnificent eating when beer battered. And i'm not a fan of fish in general. I dont understand why a lot of fishos turn their noses up at them. I dont suppose it matters too much but i use black beer (tooheys old) in my beer batter. Good Vid Roger!
Roger, first time seeing your channel. So good to get a quick and easy recipe. I’m 72 now, and live in Oregon USA. I am a national fly casting champion. I went to Australia in the 1980s, and toured from Sydney north while fishing from the beach. I used a two handed fly rod which I could cast 300 ft. I had a great time and so enjoyed waking up to flocks of parrots and all the wonderful wildlife. My favorite bird was the kookaburra. What style fishing do you do from the beach? Thanks Duane Thompson
@@RogerOsborneFishing none. It got to be catch and release except for salt water like dorado. I eventually said why am I bothering these fish if I’m releasing them. It just gives them stress. I started using a fly with no hook and when one took the fly I counted that as a catch. I loved to cast and watch the line roll.
I found your channel the other day and really like how you make everything so simple and straight forward. If you would like to really make the fish taste extra special try cooking them in coconut oil rather than vegetable oil (Some "vegetable" oils are not good for you).
@@bradcolley2391 Plus, you will be adding the olive flavor to the fish and that can be a bit off putting. Try peanut oil instead for shallow frying or a 3:1 ratio, vegetable oil to peanut oil, for deep frying.
Very good technique and good video. Even easier... I mix up a batch( maybe 5 cups) of preseasoned flour and keep it in the freezer. It's good for fish, chicken gravies etc. Tip... taste the flour mix before using it and adjust the seasoning. I shake the fish in a plastic bag (no dishes to wash). Why not use a SEASONED flour mixture to dry your fillets ? Plain flour has no taste.
@@RogerOsborneFishing Great video! You simplified frying fish more than any video I have seen. I might cook mine a little longer on each side but that is just personal preference. I will try this method very soon. Thanks!
put the flour to dust the fish in a plastic bag , salt and pepper for seasoning and throw the fillets into bag , remove ,dust off and dip in batter and cook

Can I add one thing and tip tje colder tje beer the better the batter it seems if it’s cold it works better
Dusting of the fillets great tip it is a must I reckon I did it the first time and forgot there is a genuine difference it seems to hold on better

Hi John, thanks for getting in touch, Roger.
Roger Osborne Hello. I will not make the claim that I may make
I would love to fish with you some day. I’m afraid you live too far from me. So I will enjoy you from California.

Hi Lilly. That is awesome! Im sure it will be great 😊
Good video mate, I'm going to deep fry some beer battered whiting tomorrow that was caught in Carnarvon here in Kalgoorlie.
Thanks Mike. Sounds delicious, you really can't beat beer battered whiting!
Thanks 👍
Really love your videos. Ive been watching lots of fishing videos and yours by far are the best. Have a great day!

Roger i normally throw the fish back, watching your beer and batter meal.
Look out fish.
Good video.
Thank you fellow aussie, great video, I will give it a go.
Hope you enjoy
thanks for showing. i did these massive fish fillets we bought, and still turned out pretty good. just took longer to fry.
Great to hear!
love the simple recipe.
Works a treat Roger...Well done.
Simple and easy love it thanks
You’re welcome 😊
Great video thanks Roger
Tried this with some tailor and it was absolutley the best tasting fish this way

Now just add 1/4 teaspoon of mild curry powder to your mix and enjoy even more. Great video mate keep it up.
Great recipe
Thanks a lot
Roger, I’m new to fishing and I just tried your beer batter on some whiting I caught. Unreal! Thanks mate.
Glad you enjoyed it
Great to see you found a use for corona
This comment is from 2 years ago from when not many knew it was bull shit. This comment aged like a fine wine🍷 😂
Lol
Will certainly give it a go ,thanks
Hope you enjoy
Lovely I'm sure this could be used on chips as well. I remember the Norman Hotel in Brisbane using a beer batter like this it was perfect. Lovely!.
Thanks John, All the best.
Simplicity always produces the best taste in everything. ❤️
Absolutely!! 👍
Legend, I am now a fisherman. Next learn how to catch beach worms. Thank you Roger

Sweet! Going to try this for lunch. Cheers 🍻

Okay, thanks for the tip.
Can you make them in air fryer please?
Wow yummy ❤❤❤
Thank you 😋
I'm doing this tomorrow mate!!!
Great, let me know how you go :)
Cheers Mate!
Thanks! Very good and to the point.
Glad it was helpful!
Yum. Hey Roger have you tried the Japanese Kewpie Mayonaisse with fried fish? So good
Yes Simon, We love Kewpie Mayonnaise 👍
Nice simple vid mate. Can you use olive oil here or is vegetable the preferred option?
Coco, Olive oil is fine.
olive oil has a way lower smoking point, so is therefore not ideal to fry with (in general...). It will work but you won't get a lovely crispy fry
@@bradcolley2391 Plus, you will be adding the olive flavor to the fish and that can be a bit off putting.
Try peanut oil instead for shallow frying or a 3:1 ratio, vegetable oil to peanut oil, for deep frying.
Nice man
Thanks for the visit
Great tips!! Thanks.
Glad it was helpful!
Yum yum
I use a full rounded Stout.
Awesome
Great video! Brand new subscriber.
Thanks and welcome
Wonder what we can use to substitute for the beer.
Try Mineral Water or Soda Water. Just need the bubbles for aeration.
Yummmmm 😋
I love beer batter things I dearly love a fish simple sandwich. ONLY THING THAT IS BETTER IS? A Roast Meat soft Taco
Nothing wrong with Salmon eaten fresh
My batter sticked to the pan. How can we prevent that. Thanks
Probably not enough oil in the pan or oil not hot enough.
This made me so hungry for fried fish wow.
Yes, it really is very good. i can vouch for it 😊
👍❤️❤️❤️❤️
👍

That's a great idea! Thanks Gord
And this is how you spread Corona ;-)
To think it's smart to fillet a fresh whiting to fry is beyond ignorance.
Shallow frying seems much easier!
Hi Gene, good point. I probably shallow fry more than I deep fry. Deep frying is more work.
@@RogerOsborneFishing Great video! You simplified frying fish more than any video I have seen. I might cook mine a little longer on each side but that is just personal preference. I will try this method very soon. Thanks!
any beer brand will do...
Yes any beer brand, I use whatever beer is in the fridge.
Where i come from these are called fish fingers
Yes Dom, or Fish Cocktails.
What kind of beer why the fuk does non of these recipes say what the best beer is
I use whatever beer I have on hand. It doesn't matter.
very bland use your imagination add spices baking powder my look good but it will be tasteless keep off the sauce
I don't like to overpower the flavor of the fish. Individuals can have the choice of adding extra flavor.
and that's how the Corona virus started...👍
Salmon is NOT fish n chips . Go sell your crap to the rich.
This guys beer batter has nothing on Paul's aka Yorkshire Chef
Hi Skeleton, can you give me a link. I would like to compare :)

Don't compare. LEARN
Aussie beer or US beer - no chance
What's your preference John?
put the flour to dust the fish in a plastic bag , salt and pepper for seasoning and throw the fillets into bag , remove ,dust off and dip in batter and cook
