I was later told that they are too bony but if you blend them up and make fish cakes they are great. Im going back out and hoping to catch more to give this a try. Long time follower of you, Awesome channel.
Terrific video. I sometimes use cold rice ( white or brown) instead of potato as it is also a good filler and binder plus some carbs. Your own kaffir lime tree is good to have, you can pick the leaves when young and tender. Have you also tried a smoker for Aussie Salmon, Roger? I would be interested in giving it a try with maybe some Aussie ( eg Redgum) chips/sawdust.

If so whole or fillets Have you done video on filleting salmon Bloodline removal and when caught....should I be so lucky...do you bleed them. My memory of salmon is they have not as nice a flavour as eg whiting or bream. I think you are ,meant to bleed them. Does the salmon actually work better than other fish for this recipe? Do you agree the flavour of salmon is not as sweet as the others? These cakes look amazing. The actual best eating fish in Australia is murray cod. You won't sway me.
