@benireges it usually always needs to freeze otherwise it's just a ball of mush and almost completely liquid, or it'll just melt into the oil. I suppose you could do it without freezing it first if it was really hard already. I just think freezing it is the best way to go, just to be safe.

PSA!!!!! You have to coat the ice cream and re-freeze for at least 6 hours before frying. If you don’t, it will cause a potential risk of fire or oil popping everywhere because the ice cream will be liquid form

When I got one at a fair I needed to wait about 15 mins after it was served to me just to it would be soft enough for me to eat. They had it deep frozen so hard. Delicious but a very frustrating experience.
