      It's the ongoing curse between Bob and Wade. Wade had extensive leaking issues around his house (refer to The Drowned Man saga), and once the curse was lifted on his end, Bob got hit with bad fridge luck. I can only imagine where the curse would go (probably to Mark) and what it would do to them once Bob's problems are solved once and for all 😂

    I have been poisoned after eating mayonnaise that has been left out too long. That is the sickest I have ever been. I almost died.

    I think one of the main arguments for people keeping ketchup in their fridges vs how restaurants will generally keep ketchup out and unrefridgerated is that at a restaurant the ketchup is used up so quickly, or at least expected to be, such that sufficient time will not have passed to cause the condiment to spoil. On the other hand, one of those big family size bottles of ketchup that you might have at home, is generally expected to be used up that over a much longer time frame, thus, warranting storing the ketchup in the fridge to avoid it spoiling and becoming wasted

      I refrigerate ketchup because it tastes better cold. Like sure room temperature ketchup is alright, but cold just tastes better.

    1:06 "But it's sealed. It's like that old experiment" Wade knows his biology! What he described is Francesco Redi's experiment, which refutes the theory of Spontaneous Generation. With his experiment (placing meat in two identical jars, but one of them was covered and the other one wasn't), Redi showed that maggots (fly larvae) do not spontaneously arise from decaying meat.
    Like Mark said, commercially produced mayonnaise might not need to be refrigerated because of its acidity, but it's still good to do it in order to extend its shelf life.

      Wasn't it 3 jars, two as described & one covered with a fine mesh? The mesh one had flies swarming it, but nothing on the meat, which proved it wasn't just a lack of oxygen that prevented spontaneous generation

      Once you break the seal you've introduced oxygen and whatever bacteria may be in the air, that's why you refrigerate. Over time it will go bad even in the fridge, but the fridge prolongs its life longer.
      Tldr: DO NOT LISTEN TO MARK.

      Oh no in one month we will have bobs fridge part 2. The people try to fit the new fridge through bobs studio door break it throw it on his setup destroy everything it catches on fire and his whole house burns in flames . Bob then puts out the fire with his garden hose and the person who threw the fridge will say see I told you so.

      Most food safety courses (unless it's been changed in the last 7 years) say 2 hours. But I won't argue your OCD, as someone who also gets food anxiety about eating food that seems like it's turning.

    Restaurants often keep many condiments unrefrigerated, but they also often go through multiple bottles a day, leaving any given bottle limited time to go bad.

    Food scientist here, emulsification is different from a suspension! What bob was talking about at the end of this was suspension with the temporary mixture of the vinegret. Emulsification uses a binding agent to wrap around the fat/water to trick fat and water to coexist.

    Mayo specifically can be left out longer than things like ketchup because the acids (like mark began to mention) allows it to have a longer shelf life. However this shelf life is short than written expiration dates usually if refrigeration is requested

      Another thing is I would think for restaurants that use mayonnaise, they would use a lot of it in a short amount of time , which is why it’s unlikely for them to have spoiled mayonnaise even though they don’t refrigerate it much

      ketchup has a vinegar base, it can basically go forever without spoiling. i've seen spoiled ketchup, but it was in see-through packets that were actual years old.

    Kewpie is delicious but is has a significant difference in taste compared to like uh western mayonnaise. It's less sweet and more savory in a way, and it does feel sorta weird to switch to either mayo if you're used to the other kind

    I am mostly convinced that Kewpie never goes bad. I had one bottle in the back of my fridge for 2 years, it was still fine. I had a different one that was like two months old and THEN I accidentally left it unrefridgerated for two or three days, and it was stillllllll fine
    Kewpie is invincible, not unlike a Twinkie

    I've always listened to the podcast and recently me and my sister got horribly ill. It wasn't very pleased. And the only way I could get to sleep was listening to 3 guys discuss about bread for 1h+ 😂. It sounds small but you guys really helped me get through the night. Thanks.

    I agree; I buy mayonnaise and mustard for my ham/cheese wraps/sandwiches and then put it in fridge afterwards. Then, it shouldn’t spoil because already on food shelves in store aisle.

    Fun Fact, Mayo is a great thing to use to get Sap off (from pine trees or other such vegetation), so usually if my mayo is getting old i keep it around specifically for things like that. I know weird science.

    In fairness to bob. He is absolutely right about the ingredients of mayonnaise. It is supposed to be egg whites and olive oil stirred very very quickly.

      That isn't totally accurate, the oil in mayo is emulsified in water or a water solution. It also requires an emulsifier like lecithin which is usually sourced from the egg yolk, it is not present in egg white. It can also come from soy for vegan mayos. Mixing egg white and oil will get you a creamy sauce that will eventually separate, not mayo.

    Not sure if this is the actual account for Distractible, but I’m currently listening to the “Body Odor” episode, and the bit where Mark is talking about smells from like when you’re younger (for him it was like cigarette smoke and things like that) that can end up being disgusting or comforting to you based on if or how you grew up with them is totally true, another example of this is like a lot of girls will use the exact same deodorant as their dad does because they’ve had such a positive influence on their kids/the kids have some really good memories of their dads and associate that smell with their dad

    So the thing with refridgeration warnings and expiration dates. Food is typically good far past those dates/doesn't reaally need refridgerating. Comapanies are just covering their butts to avoid lawsuit if someone eats a bowl of cereal after 6 months and wants a refund because it got stale. The date is just how long the company is willing to accept responsibility for how your food tastes.

    Mark, my guy. 'Slows' doesn't mean 'stops' and there are other kinds of bacteria besides food-poisoning ones that could still make a happy home in your 80 degree temperature mayo. But you're probably right that mayo left out isn't as dire a situation as we tend to believe it is, tho you might as well store it in the fridge unless you use it every day.

    I’ve made mayonnaise before in my culinary class and I can confirm it’s basically just egg yolk, a lot of oil, and very little vinegar (along with seasonings). I don’t think it has as much vinegar as ketchup or mustard though

    ketchup also has tomato i imagine and tomatoes are highly acidic it was a lot of fun for our ancestors to learn that via lead cutlery and plates

    Hmm, after I spread mayo on my Sammy's... If I leave the knife sitting in the dishes... The mayo turns dark and gross. Maybe it technically is "safe" to leave out...
