Try making the european pancake that is flatter and without any baking powder/soda (not like the crepe but little bit thicker) They are fun to roll up like sushi but fill with ice cream/whipped cream and strawberries or anything sweet :D Would be fun to see your version of them.

I just made homemade pancakes , Uber fluffy and delicious. My batter does not look like what you showed . Never seen pancake batter that thick. The true key is to use club soda in place of or at least for half of your milk . And yes , over mixed batter also does not create soft fluffy pancakes
I dont knoe the exact recipe but my dad adds 2 ingredients that make them absolutely perfect. Sour cream and greek yogurt. You don't taste it but it makes them thick fluffy and melt in your mouth all in one 🤤

That is close to the pancake recipe I developped over 2 years, but missed one very important step. You don't mix in the sugar with the dry ingredients (or salt, if your recipe uses a pinch of it) nor do you mix the egg whites in directly. Instead, you beat the egg whites with that pinch of salt first separately until it becomes stiff tops and then slowly mix in tthe sugar to make it basically a meringue. Then comes the mixing of the ingredients in two steps. First you mix, badly, like you did in the video, the dry ingredients. Then you basically fold that meringue into the batter, so that it mixes well with everything without overmixing and doesn't take the air out of that meringue. Then, when you let it rest, it will have a LOT of air into that batter and the baking powder+soda mix will produce even more, making the pancake, when you prepare it, incomparably the fluffiest one you ever tried.

Best pancakes I've ever made was with smashed bananas; 1 c.up AP flour;
1 tsp. sugar; 2 tsp. baking powder; ¼ tsp. salt; 1 egg; 1 cup milk; 2 Tbsp. vegetable oil; 2 ripe bananas. Grill in butter.
Recipe:
Buttermilk
Melted butter
Egg yolk
New bowl
1.25 cup Flour
1.5 Tbsp Sugar
1 Tbsp baking powder
Add together and slightly mix
Leave at room temp for 15 mins
