This is my very first comment on RUclips. I too left Trinidad very young, consequently I don’t know how to make my favorite childhood dishes. Now I’m learning thanks to you. I’m just loving it. Don’t stop.

I like your videos for the simple straightforward technique, clean, neat, efficient process of pre-planning, layout of ingredients and verbalization. One bit of advice with regard to draining fried food items, I always like using a wire rack with the paper towel or brown paper below the rack, the fried food item is less soggy and maintains a nice crunch.
I've looked at three (3) of your videos so far, great job!
Have a blessed day, I hope all is well with you and yours.

thank you and I do like the advice for the fried foods. I will try that the next time I make fried foods.Yes I do take the extra time to prep everything and to keep it neat as possible, thank you for watching.

I've lived and worked all over the the Caribbean and as such, I love picking up different techniques, spices...the process of doing things, I like and admire a clean, efficient kitchen, when I'm through, you couldn't tell whether I made a 5 or 16 course meal, appitizer or entrée, my wife is a boss, mother in law, mother, siblings and father too, I've learned a thing or two from them all, thank you, for adding to my skill set, grilling, barbequing and cooking, experimenting...I really enjoy, it's a good stress reliever too. I also love using my hands, I get them involved in most things from kneading to seasoning.
      Bon appetite😊
      Ciao

tipo boil the potato whole and peel them , you get more protein and a creamier paste when you cut the potatoes, you loose most of the flavor to the water

I just tried the recipe and it came out really good. For those of us who are not cooks it would be helpful if you gave an approximate idea of how much water goes into the dough. Also one scotch bonnet pepper is a lot for those who do not eat pepper so a tip to skip the pepper would be helpful also. Also how much time is the dough to 'rest' for? Anyway, it was pretty good. Thank you.
