I ve tried few other recipes before i found this one, and i have to say this is the best one so far, i also did half the ingredients using 4 inch but it overflowed, i think using 5 inch is better if you using half the amount of ingredients, thank you for this amazing recipe, may God bless you 😻

With the top and bottom heat on without fan.

Good recipe. Very successful and very yummy
Hi, I'm gals it turn out great ☺️
Wow your cheesecake looks amazing, I am totally trying this tomorrow! Thanks for being so proactive in the comments answering all queries, I read them all and you have really thoughtful replies. Sadly my oven only goes up to 200C, any tips on bake time? Also, if you think I could use this recipe in a 8" x 4" rectangle tin and still achieve the creamy centre effect?
Hi cat, I've not tried doing this in a 8x4inch ractangle tin but maybe you can try it. What you can do is to bake at the top rack of your oven to get the burn top and make sure to line your tin with baking paper slightly higher then your tin.
I hope this help.
This looks amazing! Thank you for the gluten free recipe! This is why I have a mixer though lol.
What’s the different put lemon juice vs without lemon juice ? Taste nicer or ?
Hi Sandra, yea it will taste better because the lemon juice give the cake a little bit of acidity cause cheese tends to be quite rich.
I hope this answer your question 😊
after watching all burnt cheesecake recipe, i guess this video is not just giving a recipe but tips how to make creamcheese perfectly, shaping the baking paper to make the shape of cake perfectly round, whisk the egg first then adding to cheese, thats a tips. even how to cut the cake is important for me!!

juz found your channel & subscribed. your cake looks interesting & delicious. May I know what cream cheese brand is recommended to use?
Just put in the oven
I seen in other videos whwee they place the pan in the top rack, so I did...and also I have the fan pn 😬
i love to cook and to be experiment, since you are using whipping cream instead of heavy cream which is expensive , i think i should add condense milk for a richer and creamy texture
Hi, im glad that you love to cook and experiment with recipe. That is such a good idea! I've never thought of adding condensed milk into it, do try and let us know how will did it turn out!
@@BakeWithTopz :just baked 3 hours ago and came out very delicious, i can't wait & still warm but satisfying. im here in japan and packaging is quite different to other countries like cream cheese (200 grams per pack) and fresh milk (200 ml per pack) i used 1 pack of cream cheese and 200 ml of fresh milk 35% fats...add 15 grams tapioca starch ,40 grams of condesed milk and the rest same recipies....thank you 4 your vids....5 stars

Hi! Would like to ask which point that cause creamy in the center? The more cream cheese/more heavy cream/the time of baking?
How tall is your cake ring? the portion seems more than normal 6 inch ring but I dunno how to adjust for a short cake ring🙈
Hi, my cake ring is 3 inch tall.
Good recipe. My wife 1st trial successfully.

May i ask using an air fryer to bake instead of an oven? Since i don't have oven at home and i really want to know. Thank you for your sharing!🙏
Hi, thank you!
Yeah you can use the air fryer to bake it. There are a few comment where they successfully bake it using the air fryer. If I'm not mistaken they use temp of 190 to 200c for about 25 to 35 min.
Got to check it once in a while
@@BakeWithTopz Thank you for your recipe again.I am gonna try this in few days. Can't wait!
Great! Have fun trying it 😊
Hi Top, it's the first time i read all the comment because all the comments got reply from you and its reaally helpful :)
And what do you think if i using non dairy whipping cream (from Rich's) instead Anchor?
Hi, yes you can use non dairy Whipping cream from rich but I personally prefer dairy whipping cream as it gives a more milky creamy taste compare to a non dairy whipping cream. 😊
Hello there! I was so ready to do this recipe with all the ingredients set out but unfortunately the mould that I have is only 5'5 inch. Should I do half of the recipe? I'm just afraid if it will overflow in the oven. What would you advice? Thanks in advance. Looking at the response of this comment section, this might be the best burnt Basque cheesecake recipe so far in RUclips!
Hi, half recipe will be too little.
What you can do is that the recipe x0.8.
So for example
Cheese 500gm x 0.8 = 400 and so on.
@@BakeWithTopz okay. Will do. Thanks for the swift reply!
I tried your recipe this morning and it turned out really well! Thank you for the recipe! 😍 Im planning to do this into mini cupcake. Can you tell me if the oven heat will still be the same??
Hi, I'm glad it turn out great!
I don't recommend to do cupcake size as the texture will not be the same but your welcome to try it!
What heat u set only top or bottom? Or both.
Both Top and bottom heat.

I love this texture, can't wait to try this out!!! Can I add earl grey milk tea into the batter? or will it be better to add the earl grey tea leaves into the cream?
Hi, yeah it's better to heat up the cream and let the tea steep for 1 to 2 hr.
Hi, may I know how many inch of Ur mold? Tq
6 inch mould
Hi great recipe thank you🙏🏻I was wondering if it is corn flour or corn starch cuz where I live corn flour is yellow/orange(corn color basically)
I believe where you live is called cornstarch.
Hi, thanks for sharing your recipe. If I want to make a pandan version, can I drop some pandan essence in? And at which part should I add it in?
Hi, that's a great idea! You can add the pandan essence with the Whipping cream. Do share with us when you make it 😊😊
Thank you. It came out perfect and not too sweet 😍 its just nice for the taste. For my cheesecake i would give 8/10. The missing 2 is bcs i went all over the nearest store and still couldn't find a good quality cream cheese accept for tatura 🤦♀️
Hi, I'm glad that it turn out great! Maybe next time if you get to buy a better quality cream cheese and try again! Perhaps try the matcha flavour if you like matcha,😊
@@BakeWithTopz will do 😊❤️
Your cake’s gooey centre is exactly what I’m looking for in a burnt cheesecake! May I ask your opinion on the ingredients ratio for a 4inch cake?
Hi Mong, thank you! For 4 inch, you need to cut half the recipe. Temp will be 220 and baking time maybe 20 to 30 min. Those are just guideline but you got to keep an eye alright.
Happy baking!
Bake With Topz awesome! Thanks for the reply :)
Watching your video I'm new friend stay connected

Hi , can I use a 7” cake pan , it seems the cake slice is too thick. Thank you.
Yes absolutely

Yup, you can use electric mixer to make.

Thank you for the recipe!^^ i like how creamy it is and it’s not too sweettt. But i kinda think i over-bake as I didn’t managed to get that runny texture in the middle of the cake :,(
Hi, your welcome! It's ok I'm sure it still taste great! Try again next time and I'm sure you will get the creamy center!
u can just knock2 the bottom of the mould as you pour the cake out
Hi, I'm sorry I don't get what do u mean.
Hi can I ask what’s actually make the cake such creamy after taking out from the fridge ? I have watch a lot of video on RUclips but mostly the cake will not be creamy at the middle part after put into the fridge? Btw I’m looking for this kind of creamy burnt cheesecake Recipe for a long time ! Thankyou! Will try very soon! 😇😇
Hi, thank you for the comment!
The way of baking and the amount in a very small cake tin makes it creamy because the batter is so thick that it doesn't cook all the way through just like a thick steak.
Ohh okay. And then can I ask that why corn flour is used instead of cake flour ?
Actually both can be used.
But I prefer cornflour as its gluten free.
Hiii! Looks delish!! I would like to know what is the baking time if i doubled the recipe ? Thank you. 😊
The baking time will be doubled
So about 50min to 1hr depending on your oven.
Bake With Topz ahh okay! Thank u so much for the quick response 😃
Why would you pour the eggs in batches? Could you plz tell why? I really dont understand
So that it's easier to mix with the cream cheese.
@@BakeWithTopz Thanks a lot! 🙏🏻
hello! i have cream cheese that is a little more runny and liquid than the ones you use. will that be a problem? (e.g. will the cake be TOO runny?)
Hello! hmm this might be a bit of a problem. What brand is that cheese?
Maybe you might need to reduce the Whipping cream a bit. How much I can't really say because got to try and see.
Hi how did you make it creamy inside? Mine was cooked all over but still tastes good, I want to achieve the creamier inside
Maybe u can slightly under bake it to achieve that creamy center.
Hello. I made this cake using 8' inch measurement. It came out nicely burnt on the top and the centre as creamy as desired. I noticed a few differences.
1. The batter is not as thick as yours. 2. The cake is too moist. The pan is wet and the baking paper is all soaked through.
3. The cake didn't bake well on the sides. The sides stuck onto the baking paper when I removed it. The texture wasn't as dense but it's as light as the middle just less creamy.
This is my first time baking. Could you give advice on how to improve? I'm using a oven toaster, not sure if it affects the baking process.
Hi,
1. The temp of the ingredient play an important role as well. Make sure ingredients are at around 24 to 28c which is about a air-condition room.
2. If its airy it sounds like over mixing.
3.. The oven plays an important as well because each oven heat distribution is different so you need to bake using it to learn more about it.
@@BakeWithTopz Are there any tips to avoid over mixing?
1. Make sure ingredients are at room temp.
2. Don't mix too long, just mix until everything is incorporated.
@@BakeWithTopz Okay! I'll try to get familiar with my oven. Thanks for the tips. You're very helpful.
Do have a look at my other recipe and use them to help you get familiar with your oven! 😊
Hi again! Haha I’m wondering if should I increase my baking time if I use a 7’ one? Thank you so much
Yea you will need to increase maybe about 10min longer
Hi! Can I check bake using airfryer with this recipe? If yes, is it the same temperature and timing as oven? :)
Hi, there are a few people here that used air fryer to bake with great success.
The temp if I remember is 200c
For about 25 to 30 min
Got to check on the 20min mark.
@@BakeWithTopz Alright! Thank you so much! :)
hi do you measure the whipping cream by weight or ml? Cause both differs. Recipe looks amazing!!
Hi, i measure by weight 😊 and do try it out!
Sorry one more question, what brand of whippping cream do you use? And corn flour any brand?
I'm using anchor Whipping cream.
And for corn flour, any brand would do. 😊
If I’m using 4 inch and I want it to be not so firm ,creamy and liquid a bit in the middle, how can I adjust the baking time and temp?
4 inch is a bit too small
So it's harder to get the right temp and timing right.
You might need to experiment with the current temp and adjust the baking time
Hi can I do mix flavour... Like matcha n original.. Separate half half.. Will it be molten?
I'm not too sure, I've not tried mixing.
Do let us know if you have tried it!
Hi i would like ask if we put into the fridge will it firm up the gooey center?
If you did everything correctly, the center will still be gooey.
If i wish to do chocolate burnt cheese cake? Whats is the ingredients?
You can mix in about 100gm of good quality melted Dark Chocolate.
Hi, i bake and after chill still firm. If i reduce thw flour is it better? I would like have bit molten gooey center after chill
If you want it to be gooey, you can underbake it a bit
How to make sure 100% the middle is creamy and not overcooked? Is smaller pan size helps?
Yeah, follow the size of my pan. Will help to minimise ocerbake
What should I do if I want to make just 4 inch?
You can divide the recipe in half.
Thank you for sharing. Incredible texture! Did you try the recipe with vanilla beans?
Hi George, I've not tried it with vanilla bean but it does sound like its gonna be awesome! Maybe if you tired it, you let us know how did it turn out ☺️
Must I have to put the cake in basin of hot water especially my cake tray is a removable type base. Tks
Hi, this cake does not need to put hot water to bake. Just bake as is.
Hi,If its 8 inch then need to bake how long?
Depending on your oven
It might take 40 to 50 min.
I will to make durian burnt cheesecake, can i just add durian and other ingredients remain the same?
Yeah you can.
I would suggest you to put the durian flesh on the bottom of the pan and then pour the cheese batter over it.
Hi! For 7.5 mould, hows the ingredient suggesting like?
Hi, for 7.5 inch mould u can just go for x2 the recipe. It will be slightly tall
Stand mixers have been invented.
your recipe is what I will try...I like the use of lemon juice and castor sugar...but may I ask why Castor Sugar and not granulated sugar? just so I can confirm my thoughts :)
Hi Cristina, I prefer Castor sugar because it's fine enough to quickly desolve into the mixture but granulated sugar is great too in this recipe.
Hi Topz, I just tried this last night. Unfortunately today there's zero creamy centre even though the cake was super jiggly when i took it out :( Could it be because i used a bigger cake tin? (i think mine is 7 or 8 inches). Does putting it in the fridge make it firm up and lose the creamy centre? Also, you mentioned your tin is 6 inch width, whats the height? I'll try to find one exactly the same and see if it helps. Thanks
Hi, this recipe is meant for 6 inch
Cake tin.
If it's bigger then it might not turn out creamy like the video.
The height of my tin is 3 inch 😊
Hello , yesterday try ur burnt cheese cake recipe ,turn out Ok
But the side n bottom not burnt at all
Should I bake longer time ,or nid to higher the temperature
Plis advice..... TQ....
Hi, what kind of oven are you using and are you using fan or no fan?
@@BakeWithTopz I'm using Sharp brand..... follow ur recipe , without fan
Top n bottom elements.....
220°C ,30 minutes
@@makyokelin2594 I've got a sharp brand small oven as well but I'm not sure is it the same as yours and I've got the similar problem as you when I bake cake. So I've actually change to pensonic and my problem was solved. So what I can suggest is to try using with the fan for sharp brand.

Can I use cooking cream instead of whipping cream? Because I only saw cooking cream selling in groceries
Hi, ive never use cooking cream before but I think you can.
Hi i try baking it. It need longet time than 30min for the top to burnt. Can i straight put at the top to bake?
Yes, you can use just the top heat to burnt the top.
Hi can i ask , if i only have 250g of cream cheese , how much do i have to minus for the rest of the ingredients?
Hi, you can divide half of all the ingredients. But do use a 4inch mould because if your using 6 inch, you might not the get soft center.
Bake With Topz how long for the oven part ?
About 20 to 30 min
At 220c
Hi, can I replace the whipping cream with whipping cream powder? If so how much would I use for it? Thank you so much for your reply ❤️♥️💕
Hi, it's best to use Whipping cream, as I'm not sure how much Whipping cream powder to use for replacement 😊
Hi. Your cake look nice. Where can i get the actual ingredients measurements?
I found it, thanks you for sharing and i will try it
Fan off?
It's sooo me every time I put some parchment paper 😜😊
Hmm what do you mean?
@@BakeWithTopz the way you put parchment paper so neat 😁
@@ellagarcia-felix5398 hahaha... Its that just when the cake comes out looks neat and I like it 😊
Hi, do you know how to make the cake more liquidy? Do you reckon reducing the time in the oven?
Hi, yes that would be 1 of the way.
Maybe reduce about 5 to 10 min max
Hi, i see that u choose to whisk the cream cheese with all strength rather then using a electric whisk, if that a trick contributing to the creamy texture other then the baking temperature itself?
Hi, actually you can use electric whisk 😊 I choose to use a hand whisk because I hope that anyone who don't own an electric whisk can still make it at home .
@@BakeWithTopz Tks for the tips, i have tried using ur method, the final result is nice, but lesser creamy and less soft compared to yours.
Is the temp, mould size same?
Hi! I have tried two recipes from online and they have not come out like your gooey center. I will try yours next. What measurements do I use for a 9” cake ring?
Hi, you can x 2.5 the recipe for 9 inch, but I would recommend you to try the 6 inch 1st as to get a feel 😊
I tried the recipe but i think my oven was the problem.. there was no cream in the center.. may I know whats the setting for the oven?
Hi, are you using a 6 inch cake tin?
The oven setting is top and bottom heat @ 220c for about 30min.
Can I make cupcake version of these ? They look amazing 😍
I've not tried making it into cupcake but I've seen a few people doing it but the feedback was to keep trying to play around with the size of cupcake, baking time and temp.
Hi. I tried to bake the cake using the top and bottom heat in the middle to bake at 220dc for 30mins. However, i didn’t achieve the nice golden brown top. It turns out with light brown crust. Please advise. Thanks
Maybe you can change to just top heat for the last 5 to 10 min for the color
@@BakeWithTopz I will try it again. Thank you!
Hi, if I want to bake with 8”, what’s the ingredient and baking time ? Thanks
Hi, the recipe is at the description below.
So just double the recipe for 8 inch.
The baking time double as well but temp remain the same.
