Otherwise I think Si Chuan Dou Hua is a good second, but I do feel it is heavily localised. Still a good benchmark though.

You may wanna consider the mala stall in Marina Bay Sands foodcourt. The Xiang Guo flavour is pretty good.

You MUST try Shisen Hanten! At least their mapo tofu which is their signature family recipe. And try Qi - House of Sichuan too - their spicy prawns is one of the best I've had, but it's not that spicy
IT WOULD BE A CRIME not to try out Green on Earth Vegetarian Cafe......yes you heard me right - VEGETARIAN. I've had mala xiang guo all around Singapore but this is by far the BEST MXG and Mala dishes I've had, and that's a lot coming from a meat eater.
My advice is to get up to speed with an understanding of this unique southwestern (Sichuan,Chongqing and Guizhou) Chinese cuisine that has been bastardized by Japanese, American etc and focus the quintessential..麻辣香锅,烤鱼,辣子鸡,口水鸡,红油抄手,夫妻肺片, 四川红烧牛肉面。 And go to restaurants that are frequent by the Sichuan community in SG and validated by Singaporeans. Just my 2 cents coming from you fan living in China for the last 12 years.

I tried many mala xiang guo, one of the best is vegetarian version at green on earth at rail mall. Many are only la (spicy) but this stall is with a lot of numb. ❤
best part about the green on earth one is you can customise it. so you can increase or decrease the numb as you wish. (same for spice, oil and salt)
Not Dong Bei, but Chong Qing... You should try this Chong Qing "Cai Png" store in geylang. (Chong Qing Xiao Mian Geylang 27A 重庆小面 - 521 Geylang Road, Lor 27A Geylang, 389477)
Found this stall with very interesting taste... different style from our local Cai Png. I think they're catered more to the China people living in Singapore. The dishes taste and flavours are very dynamic with something like layers of taste... unlike our local cai png dishes which has a very singular taste to each dish. I won't say it's very good, but something different and interesting. And they have some interesting other dishes rather than just cai png. Worth a try even if you're not planning to make a video for youtube.

Digging the new look 👍🎉 btw 东北人家 as the name suggest is not a mala place leh. Most 东北 ppl don’t even eat spicy food. Recently I had the 辣子鸡 at 太二酸菜鱼 mind blown. Juicy chicken and it really is spicy.
Ohhhh I do have a recommendation, but like my previous one (rockymaster premium laksa), this may also be a little controversial as well, because it is a fastfood chain. Try 杨国福 麻辣烫 from Northpoint. U do not have to go ham with the spicyness, 小辣 will do so as not to numb your tastebuds to the taste, but do get the soup version. The beef stock was rather pronounced, but just enough to complement the mala. The dry version is basically mala paste which u dip your blanched 料 into, very exciting flavour bomb, but it is a flavour bomb. I prefer the soup version because it is a little nuanced. Out of all the 麻辣烫 I've tried, I believe YGF is pretty up there, 宫源麻辣烫 etc can't fight.
Please try 聚宝轩 mala at MBS foodcourt. Both dry and soup versions are sedap. 👍🏻👍🏻👍🏻. Number one on my list.

巴蜀演义 at Bedok is the best sichuan cuisine you going to taste. This is my top.
You can also give 成都 at Telok Ayer a shot. This will be my second.

as some said, dong bei is not really known for spicy food tbh.
i probably would recommend the mala behind clementi mall , or wanxin mala at kovan. If you want to do chinatown, can consider lao chengdu(but considerably more expensive than the dong bei restaurants nearby)
Suggestion: maybe can swap around some of the dishes if needed. Otherwise i think you will be sick of the three dishes at the end of the show
Finally found someone that loves the peppercorns. I keep getting called crazy when I like to bite into them.

Dong Bei Ren Jia would be a wrong place to start, because the Dong Bei region isn't one of spiciness. If you are looking for spicy, look for Hunan, Sichuan, and Guizhou food, there's a saying that goes 四川人不怕辣(sichuan people not scared of spiciness),贵州人辣不怕(guizhou people not scared of spiciness),湖南人怕不辣(hunan people scared it's not spicy enough). My recommendations: Bashu Sichuan (bedok), Xiang Xiang hunan cuisine (many chains), Kuan Kuan spicy hot pot (not steamboat ah, Bugis), Sichuan Tianfu (clementi), Numb (marina bay), Nong Geng Ji (2 locations), Western Mahua (harbourfront, try their Tian Shui Mala Tang), Si chuan Dou Hua (many locations), Qi House of Sichuan (downtown), XCYD (raffles place), Cheng Du (telok Ayer), Kuan Zhai Alley (telok Ayer), Sichuan Alley (telok ayer), Hong fan tian (toa payoh),
Try Xiang Xiang hunan cuisine, yr first 3 plate will b found there, beef, la zi ji , pork

Hi Alderic, from the name itself, I know that mala would not be good. Dongbei (Northeastern) Reigon in China focuses more on savoury and sour dishes rather than mala dieshes. (So think more on the line where they specialize in sweet and sour pork, Yuxiang Pork shreds or Yuxiang eggplant or Chinese cold salads.) So if you want good mala, I would suggest focusing more on resturaunts that are named after Sichuan or Sichuan areas (like Chongqing) The ratings being high on Google probably means that it's the non-spicy dishes that's considered good.

Yes! You should go to the sichuan restaurant right opposite this 东北人家 call 冒菜 for mala。 dongbei region is more famous for dumplings and 锅包肉,not mala

Go try Sichuan Tianfu Restaurant (天府川菜)! A lil under the radar but their dishes are super authentic when it comes to mala/Sichuan flavours and they’ve recently opened a second brand along Beach Road. Must try dishes include their laziji, mapo tofu, 沸腾鱼, 干煸肥肠 and their dry pots etc

All the people suggesting Shisen Hanten, it's good, but it's closed now. Chef chen mapo tofu is similar, but much less spicy and ma, and more salty.
My experience at Si Chuan Dou Hua was pretty bad

Sichuan Alley is also good, but it's not really a mala type of place I feel, more ma.

Xing Le Mala Hotpot 4.9 stars out of 80 plus reviews. Super reasonable pricing for a good plate of mala, but i suggest don't get the frozen meat, get their sausage instead. And since you are in chong pang please help yourself with old hokkien fried porridge... porridge with wok hei? To eat is to believe

Hi alderic! I suggest this restaurant called Peppercorn Mala Hotpot which is at (Coronation Plaza)-椒点(加冕分行). The mala I feel is quite nice and the la zi Ji is really good in my opinion.
Dude you got to try this mala place located in People’s Park Complex called Hometown Mala Hotpot Mala Tang which is in an obscure part of the mall. The moment you see a sign outside called Spicy Bangkok you know you’re heading to the right place! It’s not Thai but they didn’t bother changing the sign LOL but the food is so cheap!
Alderic deserve 3 "balls" for eating mala wearing white. Try Zhang Liang Mala Tang 张亮麻辣烫 @Pickering Street, but definitely not during lunch time ;)

Might be too early to call out which Mala dish you will be reproducing for the finale but I'm calling out 麻婆豆腐 and 辣子鸡 for the finale dishes.
Try the Zhou Ji Mala Xiang guo at Telok Blangah Crescent Blk 12 #01-19. Thats my favourite stall.
Ba Shu Sichuan at Bedok. Hands down the best. If you go there you’ll see that most people there are PRC - testament to how legit it is.
Here my recommendation:My favourite malaxiangguo is currently closed ,so I would recommend the ZhangLiang stir fried mala only!

There’s 日日红 at People’s Park Food Centre, 同心如意 at Lorong Telok and 蜀香坊 at Temple St.
Won’t go wrong with Tai’er. Oh and they don’t adjust spice level.

Wan Xing Mala Hotpot near Kovan MRT Station. Standalone Mala place on the side of the road. If you go there I recommend putting the you tiao and duck into your mala.
Arguaby, ma la is a style of cooking? So there are gonna be so many different styles of food cooked in ma la form, like hotpot, soup, xiang guo, etc.
anyway, one of the lesser known, but imo very well down xiang guo place is the ma la xiang guo place at alexandra village, beside the dessert stall
Do give Ming Sheng Mala Spicy Pot at whampoa a try.

This store was good years ago, but when i went earlier this year for the 流肥肠, no more crunchy aromatic vegetables and crispy intestines, but everything was limp, the intestines was not easy to chew through and gross.
