Epicurious and BA are both owned by the same mass media company, and share some of the same staff (like Rhoda who directs video content for both). Considering how much massive success BA has gotten for its chill, personable, meme-filled content it makes sense that Epi would lean into that a little bit since they know first hand that's what viewers are responding positively to, rather than the cold and impersonal over the shoulder cooking cams that other cooking channels do.

Milk, cream
You ever seen melted cheese dude? You obviously need smth more fluid to make the sauce work, and cream or milk are the best options, as they combine better with cheese than an oil or water would.
Think about it this way, you start with a solid block of cheese, melted down it basically turns into tasty delicious LAVA, when it's cool enough to eat it will be SOLID again. You need some kind of liquid to make a sauce, whether that's broth, milk, or just plain water
