Why are you taking a bit of the coffee grounds out every time you dose the coffee?
✨ The coffee recipe requires 23gr dose of the coffee ground, and most of the time, the grinder is being inaccurate, either giving me too much or too little, so I have to scoop it out :)

It's a shame that you're leaving Gordon's, but I completely understand with the stress of staffing issues in hospitality it is leaving us all burnt out. It's hard to keep up with the high coffee demand when there's not enough people to help out. I wish you the best of luck on your future endeavours, Laura :)
Girl I totally relate. After 2.5 years in hospo I’m ready to move on. The burn out is real and it can be so difficult in hospo right now, with staffing issues, covid requirements and people honestly seem less tolerant. I’m ready to move on also
I feel you girl. Hospitality is so demanding, you are literally expected to do 3 other peoples jobs & no rewards. The industry is one of the worst, good for you for stepping away!! X
I 100% understand what you're feeling. I have been in the industry for about 8 years now. I opened a cafe and shut it down because of burn out. If you ever want to recommend a new grinder on the off chance you will be around again though Mahlkonig is releasing the E80 GBW which holds up much better in high volume environments.
I’m so used to watch Miss Laura @Gordon’s … it’s like … you represent the shop as if you are a part owner and you moved confidently and … such an inspiration !!!.
I think I'm caught up on ur vlogs. these videos have been a blessing. Doing my undergrad in medicine and these vlogs as an ambient atmosphere during late night study sessions make me feel like I'm at some busy midnight café. thanks for these XD.

Will be missing your cafes vlog. The nuance is relaxing and addicting.
It is busy and they all count on you.
But, you are also lucky, to not have anyone in-between your legs, in that small barista space.
And have Nick from outside of your space, to fill cups and help a little.
I will agree that you need a more precise grinder, so to avoid throwing out that much coffee,
and to have the portafilter to rest straight there

They say being a NASA cientist and maneuvering a drone on Mars is stressful, that's only because they never had to prepare lattes and other coffee drinks with multiple variations for thousands of customers waiting both on the side and those still in line to pay. Honestly if you can survive this you should fear nothing else in this life

Tbh, i like the sound of the frothing of milk and the smell of coffee in the morning beside the coffee itself. Im addicted to coffee. There is this coffee shop i go to here in sydney and they make a sick cup of fw. In melb, i go to the one near bourke st…nashi.

I've heard the GBW isn't as handy as expected, the built-in scale on the grinder is really sensitive that a little vibration on the counter will affect the weight. You won't be getting precise doses every time which requires you to weigh the dose yourself again. A regular E65s or even E80s would probably suit better.

sorry to write another message but you were talking on your instagram story about getting a personal grinder you should look into the Eureka Mignon it's a very nice home espresso grinder
How often do you calibrate the grinder ? it seems the machine keeps failing for correct dose.
In the meanwhile, the cafe is lack of homogenous workflow, you should see the ArtistiCoffeeRoasters channel for the tips.

I know that feeling when u are tired and drained u have to guess the smell of chai and just mixed them with the milk altogether “au ah gelap”
Once the machine will malfunction most especially in the middle of rush hour, it really stress big-time...and the feeling when you're being asked for suggestions since you were the one in the station yet not being accepted.. 🤷 its really tiring even we say we love our job. 😔
im just burnout this day, because it's beyond my capacity to make coffee alone in a very crowded cafe, and my boss doesn't care, it seems this week I will free myself from the toxic pressure of my boss

unless you ask for it, we won’t, unless you’re ordering somewhere like Mcdonalds which adds sugar syrup by default. You can always ask the barista of whatever place you’re at though!

Oh Laura btw... that grinder is only meant to do about 2 -3 grinds a minute otherwise the grounds start to get hot which will affect the espressos weight over a little bit and then you will start to get inaccurate readings.
the E65s GBW is a very nice grinder but will show bad results when your grinding more then 3 portafilters a minute
