    All I can say is wow, you're 100% correct nothing better than a chicken thigh, I watch a lot of cooking videos and I love cooking baking whatever fish is my specialty but, you are right in the top three of my favorite chefs and videos thank you

    I made a few changes with the ham, I used prosciutto, parmesan, feta, white onion, bell pepper, shiitake, portobello, button mushrooms, basil paste and this was awesome!!

    We use thighs almost exclusively, but I do not eat pork, nor do I have dairy with any meat or poultry. I stuff with mushrooms, onions sun-dried toms and season well. I love the flip method for crisping, so I'll add that the next time!

      Not much, they just won’t get very crispy but would totally work. Maybe a bit less cooking time too.

    Double loop the last knot, helps even when slippery when making the final knot. Def have to try this, Chef.

    What can we substitute the ham for?

      Any other deli style slice meat would work well. Prosciutto, salami, etc…Or just leave it out if ham isn’t your thing.

      Sure as long as it holds and doesn’t come apart as your flipping. Twine just holds better than the toothpick.

    Honestly- I am not sure if I should be jealous or not, because of those American chickens. I know, that the “supermarket” chickens are chlorinated and in the US you probably have a lot of antibiotics (...) in the animal husbandry - but gosh are these huge. Here in the Middle East a whole leg is not as big as a single thigh in the US.
