I don't know if I can like raw carrots as much as you right now, but I am like how you are before with carrots: I only like carrots when they're cooked through and soft. I don't like the extreme crunch of raw carrots :( I also feel like the carrot flavor is so much more prominent in cooked-through carrots!
Prep your veggies however you need to to make them to your liking. No sense in making it a way you won't like it, it'll make you less likely to eat it! Better a little cooking or seasoning veggies than not eating them at all. :)

Cooking carrots actually brings out more nutrients anyway so you don't need to force yourself to like them raw! 😊
