Good Day Mandy, I grew up in NYC and frequently went to Chinatown and one of my favorite dishes was Cantonese Chow Mein but they served it over crispy hot noodles. I can still remember hearing the sizzle when they put the Beef and veggies over the noodles, so good. Have a Blessed and Beautiful Day ✝️

I find if you just toss the pulverized ginger in, it works just fine. Instead of an egg white, I've been using a teaspoon of sesame oil. When it comes to the starches, I use a teaspoon of cornstarch and 1/4 tsp of baking soda like you. For anyone new to this, slicing your beef on an angle really helps you get those thin slices. 45 degree angle works well. I love your videos and you've taught me so much!!

Growing in in the 70s, Chinese noodles were hard to come by since at home we often ate rice...My grandma use to use readily available italian pasta for our chow mien and our beef soup w noodles. I'm still fond of that combo, but my kids are glum when I run out of chinese noodles and use pasta instead lol... I'm sure most kids would love this though.

I've been making essentially this dish for many years now. The funny thing is, I never had a recipe. I just knew to use soy sauce, oyster sauce, a little sugar, corn starch, and some beef broth. That came from another recipe even further back in my history and I don't even remember what it was. One day I had some beef I wanted to stir fry but didn't know what else to put with it. I looked in the cupboard and found spaghetti noodles. I had scallions growing in the window box and garlic, and of course soy sauce and oyster sauce. Instead of black pepper I used dried and ground serano peppers. It was very good, and now I make it all the time!

I've used spaghetti in my chow mein for years, mainly because you can be quite rough without it breaking up and turning into a big mushy mess. cook it in chicken stock and it will lose that distinctive pasta flavour once it hits the sauce.
