Just want to point out how dangerous pressure frying can be. If not done properly, your pressure fryer/pressure cooker can turn into a pressure bomb. I've seen it firsthand. It's not fun watching an industrial grade pressure fryer go boom.

Consumer pressure cookers specifically warn you NOT TO DO THIS. The commercial ones at KFC are designed to handle it. The ones at wal mart are just for holding water/steam!

Im a sous chef for a 5 star restaurant and we have used those small cookers for over 10 years. The bubbles coming out of the oil is steam..... only reason they have stronger lids at KFC is cause they are frying 40 pounds at once. Pressure frying releases ALOT less pressure than pressure cooking with water. With oil it runs out of moisturewhen the chicken is cooked. With water the pressure from the steam is unlimited because its literally filled with water. Dont spread stupid falsehoods. Why would frying oil produce more steam than literally boiling water? Think before you write something silly and look dumb lol
It's called "broasting" and KFC gets all of their low pressure, pressure cookers from a company that doesn't make them for anybody else. The design is proprietary. They won't sell you one as a private citizen, no matter how much you offer.
There's a cooker you can get from eBay, etc. that's a home, low pressure cooker called the "chicken pot" (I believe, I have one in the pantry) and it does *basically* the same thing. The secret is the low pressure (4-6lbs) at which these cookers operate. The KFC cookers are massive, automatic and cook the chicken under a preset pressure for 15 minutes, then the basket raises and drains the chicken for a preset time and gets emptied and the next batch goes in. It's really very cool.
I started eating KFC when it was still Kentucky Fried Chicken and you could buy either a slice of strawberry pie or, *a whole pie* for $4. The chicken was much better then. They still used the same cookers but, Col. Sanders still toured the country, visiting the franchises and "riding roughshod," making sure that everyone was using the right amount of the proper ingredients and not skimping on the types of ingredients and that the chicken tasted the same whether in San Francisco or Dallas, Texas. As soon as the Col. passed away, all the franchise owners went off script and started changing the ingredients in quality and origin, if not changing it all together. Today, no place I've been tastes the same as the old days, "original recipe" or not.
I figured out (from someone on TV who went to great lengths to reproduce) the original recipe for KFC chicken, bought a low pressure chicken cooker and use the Col's "secret ingredient." I get amazing fried chicken. What's the "secret ingredient?" you ask... He was quoted as saying that the one ingredient that you cannot change for anything else or it changes the taste completely (and he's right) is the type of pepper. You can't use just any black pepper, it has to be... (drum roll, please)... *Tellicherry black pepper.* Nothing else will do.

Doesn't matter. Other pwople make pressure cookers for fried chicken. Every single grocery store in America selling fried chicken uses a pressure cooker the vast majority of fried chicken places use a pressure cooker.

When the franchise was sold and they started marketing the extra crispy style chicken, Col. Sanders didn't accept the idea well and called it "fried dough ball" chicken but by then he had no say in what the new owners were doing. My first KFC was in Sparks Nevada back in 1958. Even after all those years I still remember it. All our family outings included buckets of KFC. It's still my favorite chicken by far.
Just remember: You cannot duplicate or copy KFC unless you have a broaster.

Just to note: Pressure cooker and pressure fryers are different. The former can't be used for deep frying.

I believe the pressure produced by steam from boiling water would be far greater than pressure produced by evaporation from the oil/chicken.
Most good pressure cookers have a safety lock that will not let the lid open unless all the pressure in the cooker has gone away anyways.
@@coleluna2073 I watched the video but I've already read about deep frying with pressure cookers and pressure fryers before watching this video. I ain't kitchen instruments scientist so I can't give you precise explanations but basically in the long run, deep frying with pressure cooker is not good. Might be because boiling oil and boiling water have different properties and reaction with pressure? Idk but anyways if I recall correctly, the founder of KFC is one of the first/popularized the use of pressure fryers because he found out that deep frying with a pressure cooker is unsafe. He later heard about pressure fryers and from then on, most of our fast food Chicken are cooked using pressure fryers.

The best way is with a cast iron stockpot and turning the lid upside down and weighing it down.

When I cooked chicken, it was water, flour mix, and then in the rack to pressure deep fry if it was original. For extra crispy, it was water, flour mix, water, flour mix, rack, and non-pressure deep fry.
And the flour mixes were different between the two. I don't know what the difference was

Home alternative to commercial pressure fryer: (tender & crispy!)
1. Toss your drumsticks in a slow cooker with about 1 cup chicken broth and enough water to almost cover meat. Cook on low for about 4 to 5 hours. You'll have to feel out the time for your slow cooker/amount of drumsticks. The goal is to remove the drumsticks just before it gets to "fall off the bone" consistency. It's okay if your drumsticks haven't quite reached 170°F, the deep fryer will get them to temp.
2. Line drumsticks on cooling rack. Allow drumsticks to cool to the touch. Then, dredge chicken in whatever method you prefer.
3. Deep fry chicken at 350°F, just until crust is dark golden brown and skin is crispy, no more than 5 minutes.
4. Enjoy! Tried and true, my family loves it. Tender, juicy, crispy chicken.
*If your drumsticks turn out a bit dry, but it's tender, most likely you left them in the fryer too long (they dry out easy because they're precooked, you're just frying to crisp the skin and cook the crust). You can adjust frying temp and/or time however you need to avoid this.

@@sarceexplores I apologize for taking so long to get back to you! The boiling method can work as well. I recommend using chicken broth, or part chicken broth and part water, to impart flavor. You can use cheap chicken broth in a box or can, or even mix 1 cube / 1 TSP chicken bullion per 1 cup water. Since you're only using the chicken broth to poach the chicken in, don't worry about purchasing a high quality broth. (Note: you can save the chicken broth at the end to make gravy with instead of dumping it down the drain). If you choose to only use water, I highly advise adding a healthy dose of salt, as well as a bay leaf or two, and any other aromatics, whether it be peppercorns, rosemary, thyme, etc. Of course, aromatics can be used in conjunction with chicken broth as well.
Whichever liquid you use, ensure it's enough to cover your chicken. Take care to not place your drumsticks into boiling water, as the meat may sieze. Instead, add cold water/broth to your drumsticks (you can add your salt and/or aromatics now) and bring to a boil. Once it comes to a boil, immediately turn your burner down to low and simmer low and slow for 1-2 hours, until desired consistency is reached.

It's called broasting brother, and my grandma used to do it. She actually had two methods of making fried chicken though. One method was the broasting which is frying in the pressure cooker, and the other method was frying it in an iron skillet where it wasn't even completely submerged in oil. It was outstanding both ways, but I can't master my grandmother's iron skillet skills so I prefer to broast or deep fry.
As someone who's worked at KFC AND Popeyes and owns a KFC franchise, this is not a thing. He's just straight up lying to you.

Copycat recipe
Ingredients
2 cups all purpose white flour
2 tsp table salt
1 1/2 tsp dried thyme
1 1/2 tsp dried basil
4 Tbsp paprika
1 tsp dried oregano
1 Tbsp celery salt
2 Tbsp garlic salt
1 Tbsp black pepper
1 Tbsp dry mustard powder
3 Tbsp white pepper
1 Tbsp ground ginger
1 Tbsp MSG, optional
7 lbs chicken
oil for deep frying
Dip each of the pieces in plain water, shake and dredge in the flour and spice mixture. Repeat for all of the remaining pieces. Leave the pieces to sit in the dredge for 10-15 minutes while the oil heats up. This will help the coating stick to the chicken better.

At KFC we first wet the chicken, let it drip a little then throw it in a flour mix that also contains egg powder and the secret herbs and spices. Then you dunk it back in the water, let it drip completely then throw it back in the flour, then you place it in a cage or on a tray and cook it. Then you gotta make sure to let it drain before putting it in the hot box.

I think the secret to good fried chicken that restaurants do that we don't do at home is actually unintentional. That secret being the heat lamp/hot. By putting it in the hot box you're keeping the food warm of course but if it sits under the heat for a long enough time the internal steam continues to cook the chicken and the temp rises. With dark meat. the difference between 165F and 170+ makes a huge difference in the tenderness as the fat renders more and the chicken tends to pull apart like BBQ compared to the steak-like texture at 165. Just a theory of mine but yeah

I worked at a KFC (USA) as a cook (in high school). We DEFINITELY used (Industrial) pressure cookers to fry Original Recipe chicken.
We would do smaller (emergency) batches in a small non-pressure fryer, but the chicken wasn’t of the same texture and quality.
Oh, and KFC uses pure vegetable oil. No beef or wagyu tallow for flavor (that’s CHEATING!) 😂

In the UK, the best place to get KFC is central London (the one near Tower Bridge is good). They're so busy the chicken is always fresh. Where I live in Dover, it's often been under lamps for a while and is dry.
I worked at KFC they only pressure fry the original chicken, the crispy was an open frier!!!!
Extra crispy is cooked in a normal fryer but it's double breaded and differently seasoned.

It’s absolutely fine to do this at home with your usual pressure cooker. Just make sure to only use canola oil as it has a very low drag co-efficient which makes it safe to do this. I do it atleast once a month.

I work at Ashley’s Market in VA. We pressure deep fry 32 piece batches (8legs, 8wings, 8breast, 8thighs. They come out noice. I suggest waiting a few minutes to let the breading to hydrate before dropping. You get a darker and thicker/hardier crust.

I worked at a KFC when I was in high school in the 70's. We had a huge computerized cooker that we used. Perfect every time. We had other tricks also. A marinade tumbler for the extra crispy, etc.
Same thing with the spicy and non spicy chicken at wendys, its called a henny penny and thing terrified me😂
