I have horrible luck with fruiting on my coconut cream. And so does a couple of friends of mine
I have a 12 year old coconut cream. I keep it at about 10-12'. Open the center of the tree for an open canopy. CoconutCream tend to have many low hanging branches that point downwards. Trim those or else your fruit will be low to the ground and accessible for animals. I don't give my tree any nitrogen since it's mature. I feed it with homemade fish emulsion, wood ash and micronutrients. They are susceptible to powdery mildew. So make sure to do initial spray with sulfur in January during cold peak. 5 weeks later you will get bloom formation, mid February. Then switch to copper fungicide. Do not spray open blooms, you will sterilize them if you do. Spraying closed blos is fine. After fruit starts setting and no blooms, spray fruit with copper every 2 weeks until they're the size of a quarter. Good luck.
I also deprive my tree of water at the end of September with a tarp. This also helps with blooming and mature mango trees don't need to be watered.
How old is the tree? I started using fish emulsion, wood ash and micronutrients. The tree friluotef for the 1st time 2 years in a row. I also bury fish carcasses. If your tree is older than 7-8 years, no nitrog2n fertilizer which only promotes green leafy growth and no fruit. I'm in Palm harbor, Florida and depriving it of water starting in November stresses the tree and triggers a better blooming response. It's taken me years to somewhat figure out cc. The fruit is so delicious and this year I got about 40 mangoes. Last year 80. Good luck.
I just finished my Prune/tip for the year. My last branches were cut off a few days ago. They were down pointing and I air layered them. 2.5 months ago to get nice root balls that will speed up their growth now in Pots. My friends and Neighbors love me now.
I just hollow out the middle to leave a sort of donut shape. I also thin out the thicker growth on each main branch.

Thank you for this video! I just pruned my Carrie in July and now a bunch of new branches, after getting wet with rain, are now twisted and crossing. Do I leave those alone until next July or do I do anything with them now?
Rain and then sun do some tricky stuff to Greener wood in the branches. Give them some time and observe. I've watched young trees get rain and look like they are going to die. Then the Sun Magically make them stand at attention once more.
My tree guy (certified arborist) retired. I do the work myself now, not trusting newcomers.
