- Chef Anthony Lombardo is challenging the way people look at Italian food at his restaurant SheWolf in Detroit, Michigan. This is not your typical red sauce Italian American restaurant, though he does still love a good chicken parmigiano. At SheWolf, Chef Lombardo makes contemporary Roman cuisine all centered around pastas like Cacio e Pepe, Carbonara and stuffed shells called Conchiglie Nere filled with octopus bolognese.

I ate carbonara maybe 50 times for “research”.
No butter in cacio pepe. No no oil in cacio pepe. Just black pepper, pasta water and pecorino romano. And the skill of turning this into a silky creamy sauce.
I loved eating in Italy, but I also love the Italian dishes we eat here in America. They really are American dishes, I don't understand the hate for these dishes in Italy? Its just a different culture being influenced by a different country.
I hope it’s good I’m going in 2 days.

Chef loves the air quotes. 😂 Adding butter and olive oil to the Cacio e Pepe is definitely not alla Romana. I'm sure this version is delicious but I prefer pepper, cheese and pasta water only. That said, all the dishes look tasty indeed. 👍
