    As the Mid-Autumn Festival approaches, It's time to indulge in the joyous traditions. I'm excited to share out special treat today: Lava Custard Mooncake.
    This is a true delight with its three delectable layers. At its core, you'll find a luscious, runny lava filling. The middle is a creamy custard, and all of this goodness is wrapped in a buttery cookie crust. It's an amazing combination that will surely captivate your taste buds.
    INGREDIENT LIST
    For the Lava Filling (7g each, makes 16 fillings)
    2 salted egg yolk
    14g / 1 tbsp of butter
    68g / 4.5 tbsp of whipping cream
    3g / 1 tsp of gelatin powder (Amazon Link - geni.us/gelatin-powder)
    30g / 1.5 slices of American cheese
    17g / 4 tsp of sugar
    7.5g / 1 tbsp of milk powder (Amazon Link - geni.us/milk-powder)
    For the Milk Yolk Custard Filling (18g each, makes 16 fillings)
    120g / 0.5 cups of whole milk
    42g / 3 tbsp of butter
    3 egg yolks
    2 salted yolks
    80g / 6.5 tbsp of sugar
    32g / 4 tbsp of cake flour (Amazon Link - geni.us/cake-flour)
    15g / 2 tbsp of milk powder (Amazon Link - geni.us/milk-powder)
    5 drops of red food coloring, optional
    For the wrapper (25g each, makes 16 wrappers)
    91g / 6.5 tbsp of room temperature unsalted butter
    80g of icing sugar (Amazon Link - geni.us/icing-sugar)
    1 egg yolk
    30g / 2 tbsp of whipping Cream
    6 drops of orange food coloring, optional
    1/4 tsp of salt
    200g of cake flour (Amazon Link - geni.us/cake-flour)
    20g of cornstarch
    Other
    1 egg yolk
    2 tsp of water

    I've unfortunately left it too late to buy my egg yolks.
    I managed to find 2 packets, which are frozen - I've never used frozen ones before, so I'm not certain how to use them - guessing I should just leave them out to defrost first, then use as usual.
    If I had more egg yolks, I'd try this, but I can't spare them this year!

    Hmm. Chinese food with butter and cheese. I was told by a Chinese lady (my ex) that "Butter is just fat!" Well, not entirely. She would not eat butter or cheese. As Mindy says, times are changing.

      Per Google: Butter is a dairy product made from the fat and protein components of churned cream. It is a semi-solid emulsion at room temperature, consisting of approximately 80% butterfat. So yeah... its mostly Fat. Cheese is much the same. If she was worried about her weight, its understandable that the shy away from them. A small block of cheese (or butter), is very "fat-calorie" dense.

    When pressing, is it better to use rice flour since it doesn’t contain gluten and by this you avoid the sticking?

      This recipe contains 200g of cake flour so I don't think you can make it gluten free. And yes, when pressing, it prevents sticking.

      @@SoupedUpRecipes Thanks! Thankfully we don’t have any gluten allergies in the family so the question was pehaps a bit unclear. I bake a lot of bread and normally use a little rice flour when shaping since you avoid the loaves from sticking. Problem is if you use too much it can leave a bitter/metallic taste when baked off. You don’t want risking this for the moon cakes…

      That is salted egg yolk and it can not be replaced with powder yolk.

      That is for traditional mooncake, which I have explained in this video - ruclips.net/video/2axmGxhLjws/видео.html
      This one, you can eat it right away because the lava filling will set if you let it sit for too long.

    Hi!!! I liked your recipe today. I wish you wouldn't use grams and all the weight stuff that we have to look up. Most people in America use cups and ounces. I see you have that sign in the corner what the ingredients measurement s are but not for everything you say.This looks tasty but has alot of steps. I wonder how these taste. Nice Video!!!...🦋
