Japchae is one of those dishes that you want to make the day of - as it does not keep well.
However, if you want to store any leftovers - place in refrigerator (max 1 day) ... reheat the next day in microwave.
But taste & texture drops considerably.
If you put the spinach on the side and add it only to the portions to be served, the rest of the japchae can be stored much longer. It's the spinach that cause the spoiling. I never use the microwave to reheat japchae. It changes the texture. Add a bit of water to a skillet and heat the portion you want in the skillet. Doesn't take longer and keeps the texture right.
Make Katie cook more. She’s hilarious. Love her.
Love japchae. Although I rarely make it because it requires a ton of prep work. I always used Daniel’s mom recipe they filmed a while back and it always comes out great but will have to try this version too! Cheers neighbors!

Looks fantastic! I love it and really should make it myself. Last time I ordered it, it was $10 for a super small portion (and it was vegetarian....I added some beef from our bbq, lol) Korean food is crazy expensive at restaurants in my area and our Korean Market only sells a handful of ban chan and marinated bulgolgi beef ( it was $13 for around 16oz, including veggies like onion&carrots.

Okay I never season the noodles this way. I season the noodles a different way I'm going to try this It looks great. Also I don't soak them first and I think I will soak them first from now on because they are difficult to cook sometimes it's tricky. Also I season the vegetables with pepper and salt but I like the idea of using just salt so I'm going to try it all this way thank you!

Thanks for the recipe! One question plz: why can’t you stir-fry all the veggies and meat in one shot, since they will be mixed together anyways at the end? 🤔
Keeps the veggies al dente in texture and vibrant in color to cook it separately and take them off the heat versus, keeping it in the pan and the carrots and onions wilt and brown in the heat.

Can we not use sugar in it? Is it necessary?
not necessary; but there is a noticeable difference. a hint of sweetness is nice. i use granulated stevia instead.
Interesting she cooks the sauce in a pan and then adds the noodles. I usually mix brown sugar and soy sauce together and just dump it over the noodles and then add the other ingredients. I'll have to try cooking the sauce first.
Use an apron to protect you clothes!🙃
