Mmmmmmmmm! I really enjoy the chewiness of japchae. Now I know not to do the final step of stir frying. That’s a great time saver and I like the idea that the veg will stay crisper too. Oh I can’t wait to make japchae again!!!

Made an amount slightly bigger than what you make here for my roommate and I. Was supposed to last 3 days.
We ate half, put in the fridge, then opened the fridge 3 times during that day and finished all of it.
    It's too good 🙏🏻

I made this! I was worried when I boiled 16oz of sweet potato noodles because my eyes told me it wouldn’t be enough noodles, but when you mix everything together, it’s perfect!! Next time, I might not put so much sesame oil because it was too strong for my families taste, but other than that i LOVE how this came out! I used beef chuck slices and I pounded them before slicing them into strips. I will absolutely make this again. Thank you so much, Seonkyoung!!

I love the idea of you saying the correct name for your noodles as it helps us non-Koreans to learn pronunciation and context. Thank you so much.

Week 4.5 of social distancing here in Calgary. Have been binge-watching and building my “must have” grocery list for when I can go to the closest Asian Market for all of the specialty items I can’t get at the local grocery store. Gotta say... you are a TOTAL corn ball. So refreshing to see you do your Japchae Jive while you unappologetically eat with your fingers. At a time when there is so much darkness and negativity, your goofiness has been sooo refreshing. Lots of respect, appreciation and love from Calgary. Be well and safe to you and all out there.

One of my favorite dishes. I use button, crimini and woodear mushroom strips instead of shiitake. And I use more garlic. For the beef I use chuck cut carefully across the grain so it’s super tender with great flavor. I usually leave out the egg as my daughter hates. Eggs. I used malt syrup and it was amazing. I use the same water to cook first the chard, then I take chard out and add noodles, let cook 5 minutes, then I put in 1/4 lbs bean sprouts. Then 3 minutes(8 minutes total for noodles) later I drain them. Then I start to assemble it in a bowl with the seasoning toss it, then add in the veg and meat. So yummy😋

T think the word you are looking for is gritty I too hate that in any of my greens
So I wash them at least 3 times, and your recipe looks so delicious can’t wait to
make it for husband. I appreciated how thorough you are with information and directions
    I also love your enthusiasm.
    Thank you!

That's very healthy too!! I have a lot of Swiss Chard growing in my garden so I'll use it instead of spinach.
