    The British Fruit Cake is traditionally served during the Christmas season. It is full of dried fruits and nuts, laced with alcohol over several weeks, and often covered with marzipan and royal icing. The problem is that it's both expensive to make and it needs time to age. Luckily, there is a much simpler version of this cake for the last minute baker, and I call it an Easy Fruit Cake. You may know it as a Boiled Fruit Cake, a War Cake, and/or a Bachelor's Cake. I love a lot of things about this cake. I love that it still uses all the necessary fruit cake ingredients, like dried and candied fruits and ground spices. I love that the batter is so easy to make and you don't need to pull out your stand mixer. And most importantly, I love its flavor and that it can be eaten almost right away. This is one cake that is so good that it begs to be made all year, not just during the Christmas season.

    Stephanie, this is what my mother has been making for over 65 years, minus the orange peel and replaced with walnuts from our walnut tree. A childhood favorite. I too will be baking this and my Applesauce cake.

    I remember my mother made this in the sixties, at every year before Christmas time, she added rum to it, and no one liked it, but her. . . I asked her to make it with out rum, and every one loved it. She added candy cherries also. Thanks for sharing this, and Merry Christmas to you. Christmas isn't the same with out fruit cake.

    The cake sounds really good but I have to confess that the "icing on the cake" was the bark, followed by the camera panning down to your sweet little dog standing at your feet!! In fact, it was so cute that I had to rewind to watch it again. I have been grinning the whole time I have been typing this response.😄😁❤

    I bake this type of boiled cake through out the year, with variations. Some times adding cherries, walnuts {put them in at the last mix} mango, apples, i make my own orange candid peel as the taste difference is wonderful. Like you I found it difficult to get through out the year, so just started making it. I am ashamed to say ... I do stockpile cherries. Your videos are a joy to watch. Clear and conscience, spreading the joys of baking.. thank you.

    I've never made fruit cake but I LOVE it! I bake a lot of cakes and my team at work has requested a fruit cake when we resume work in the new year. I'm baking batches of cookies because I wasn't sure of the fruit cake... Now that I've seen this video, I'm gonna give this a shot!! Wish me luck!!

    Very similar to the fruit cake my Mom made but she boiled hers in grape juice instead of water. She also used dark brown sugar. I never got the full recipe before she passed away so I've been trying to recreate the one she made. Thanks for the recipe. Can't wait to try this.

    When my mom makes her fruit cake she makes it in a muffin tin like you do cupcakes. Then she freezes then. That way you get one portion when you need it.

    I made your cake yesterday and it turned out well. My husband who does not eat cake asked for the cake to be cut and ate three slices before Christmas 😁and said it was really good. Thank you for the lovely easy recipe will be baking one more today.

    Thankyou, this fruit cake was really delicious. Tried this recipe without candied peel but substituted walnuts and put into 2 smaller plum tins to make it last longer for family. Used sultanas, dried cranberries for the fruit.Took 30 mins ...very good. I also boiled the sultanas separately for 4 mins in brandy first. Thanks again from Italy.

    My husband loves fruit cake which I normally make twice a year, once weeks in advance for Xmas and then a Simnel cake at Easter. I have just made this and it is so quick and easy I think we'll be enjoying it on a regular basis

    This is such a good, easy fruit cake. I didn’t have enough dried fruit and I used chopped Mejoul dates. I plan to make it again soon as it disappeared before I could think of freezing it.😊

    Thank you Stephanie & Rick for another great instructional video. I respectfully disagree that kids & alcohol flavoured bread do go perfectly together in the week before Christmas - anything that gets them to settle down and into bed easier ;) I'm thinking candied red cherries, pecans, & chopped chocolate discs with some Kahlua or Bailey's for flavouring. All the best this holiday season & continued good health in 2021. Thank you for another year of making our lives better.

    I have ditched my traditional fruit cake for this recipe since the last 3 years! Its perfect everytime and as you say, keep it for a couple of days and it tastes divine.

    I have tried this recipe of yours, the taste is excellent, I however face one issue,sometimes after baking and cooling the cake, when I cut it, it crumbles. Why does this happen. Secondly sometimes even after one hour, of baking, I find that the toothpick inserted dies not come clean. How long should it bake for the measurements given in your recipe. Thank you for sharing such a wonderful recipe.

      Yes you need to bake the cake until the toothpick inserted into the center of the cake comes out clean. Every oven is a little different so it could take longer than what the recipe states. I find it best to store the cake overnight before cutting as it improves both the texture and flavor.

    In the printed recipe it says; If using a dark coloured pan reduce the oven temp. from 180 to 160 degrees can you tell me why please. Many thanks for your recipes I follow them constantly.

      Dark colored pans absorb and distribute heat more quickly than light colored pans so you need to reduce the heat a little.

      Yes this recipe uses baking soda and as you can see from the video it worked fine.

    Lovely as always!doubt…the two cups of dry fruits (you first added it while boiling,was that 1 cup)would include the peel/mixed peel right??

      No. You use 2 cups raisins and boil that. The 1 cup candied peel is folded into the batter.

    Can I use rum instead of water and instead of boiling the fruit just soak it for two three days? Since I don't have brown could I caramelise the white sugar

    Fruit mixture cooling as I type... looking forward to finishing it and, most importantly, eating it later/tomorrow. Couldn’t find orange candied peel here in the uk so might add some crushed almonds instead? Fingers crossed I won’t mess it all up :) such a lovely lady, love your videos.     Hi again Good afternoon. Well am here to give you a low down about my fruit cake. Well it turn out great i not to long put icining in a peice and am having a slice from it, its delishious. Hm.... but i encounter one problem my fault actually. Well i bake the cake am guessing about half an hour to long plus i left it in the oven overnight after baking it and the bottom of the cake burn a bit. So my cake in my 9 x13 foil tin pan would have been perfect at 2 1/2 hours. So next time i will know better. Anyways thanks for the basic recepie. Or yea all the water dried up and i did not put anymore adding to the burn below. Have a lovely day.

      No, I do it exactly like the recipe but pour a couple of tablespoons of rum once it's just hot & out of the oven. It comes out just perfect
