While Poliphony Digital is japanese, so that's why they have premium partnership with brands such as Toyota, Nissan, Honda or Mazda... They're Japanese brands

What’s the point of having 3 different Cadillacs in different colours when they are the same car.
Because in real life they race multiple cars in one race and by using different colors it makes it easier to tell them apart.
