Wood Fired Waffles | Family Feast Over Fire

  • Here it is everyone, week two of family feasts over fire!
    This week we are making wood fired waffles, perfect fodder for any mealtime. Breakfast, brunch, lunch, dinner and dessert every meal time possibility is covered.
    Today we are using a round waffle iron, in theory these make pre portioned waffles which you can tear or cut into quarters. However, being round they could and should be used like a soft taco shell, stuffed with all manner of things straight from the fire. Today we are making breakfast waffles and will be pairing them up with crispy back bacon, along with a touch of chilli jam for us bigger kids or the sauce of your choice.
    The waffle recipe uses a touch of honey from the beehives here on the Priory Farm estate, just a stone's throw from the barn. Adding a little sweetness and that all important caramelised crust. Baking powder adds the perfect fluffiness and rise from the batter as soon as it hits the hot iron.
    It’s important to have a sturdy pair of fire gloves to hand as the waffle iron gets really hot and is a little tricky to turn without them. If your heat source is only on one side of your fire pit you will need to rotate the iron half way through cooking to make sure the waffle iron gets an even amount of heat.
    Don’t just limit your waffle to the usual suspects: how about fried chicken and winter veggie slaw, roast squash and chorizo, ham and soft boiled eggs or smoked salmon, watercress and cream cheese for savoury waffles. Why not get creative with dessert waffles, wait until the waffles have cooled and stuff them with ice cream and a fistful of sprinkles. Or straight from the fire with roast bananas and a little dark chocolate, fresh fruit and toffee sauce or roast chunks of apple with an oat crumble top?
