INGREDIENTS:
2 chicken Breasts
2 tsp chopped rosemary
1/2 lemon, zested (reserve juice for baby spinach)
4-5 vine ripe tomatoes
1 avocado
1/4 of a red onion
1-2 handfuls of baby spinach
olive oil, salt, and pepper to taste
sliced rustic sourdough bread
-Pesto "Dijonnaise"
1/2 cup basil
3 tbsp almonds
4-5 tbsp olive oil
2 tbsp parmesan cheese
2 tbsp mayonaise
1 tbsp dijon mustard
salt to taste

Tried this sandwich today I am in love 😍 great recipe.
Just made this and I have to say- my only regret is not having found this recipe sooner!! I got about a million taste buds screaming "Thank you!!"
I did sub the olive oil for coconut oil though and used a lot less than you did. Also, I used italian bread. YUM!!!

It's weird that pesto is an italian recipe used abroad in sandwiches, but we never put pesto in sandwiches, just with pasta. Anyway this sandwich looks very good.

need cheese on there! You can put your pesto spread on one side, just put extra. On the other side put cheese, and toast it with the cheese on there so it melts.

Byron, what is a good substitution for onions? I have bad reactions to everything in the onion family, but I think recipes taste bland when I omit them.
Olive oil... olive oil everywhere ;) When I want a sandwich, it's usually because I want a simple meal. I think I'm too lazy for this delicious looking sandwich :(
