Byron, I made this recipe exactly as you did and it made a delicious dinner for my friends and I. Enjoyed a nice bottle of Chardonnay along with it and had cheesecake for dessert. What a wonderful dinner for four for under 15 dollars. Wine not included. Guests brought that for dinner. 2 bottles. Cooking is a great way to bond and this recipe was way better than any restaurant scampi I've ever had. We also had fresh toasted French bread and a mixed green salad. Incredible! The entire course cost only 15 bucks and served four. Everyone loved it. Thanks very much. I just subscribed to you so keep me posted on other great recipes.
william spencer, that was pretty cheap, not bad at all. The shrimps that I buy are very expensive and I like a lot of shrimps in mine so I usually get 2 lbs which cost me almost $40 because I get the jumbo gulf shrimps, as I don't like farm raised shrimps. I'm going to try this recipe and get my experience of that taste, as it looks so delish....

Looks nice! I would make one small change as the shrimp noticeably shrunk more than I would care for. After searing the shrimp I would take them out and make the sauce and then add them back right after the pasta so they can mingle. I think the shrimp will retain their crispness and pop when you bite into them a bit more with that small change.
That is a very good, simple recipe. Just for an FYI, scampi means shrimp in Italian. It's funny when they say shrimp scampi, because it's basically saying shrimp shrimp.

Absolutely correct! I knew he didn't have a clue of what he was talking about when he started talking about cooking his fresh pasta al dente! You can either have fresh pasta or al dente pasta.........not both!

Your sauce should be ready and waiting for the pasta because the pasta needs to be removed from the water and added to the sauce at just the right "doneness". If the sauce is not ready when the pasta is done, it will become overcooked if left in the water til the sauce is done. If you remove it from the water and set it aside to wait til the sauce done, then the pasta will cool and also start sticking together which is not good either.

You can also get cooking wine at your grocery store. Before I turned 21, that's what I used. It's usually around the vinegar in the store. No alcohol, but you still get the flavor from the wine.

You gotta know the rules before you can break them. Italians are okay with cheese on seafood as long as you know you're not supposed to do it. Does that make sense? Lol
Sorry, but you're doing it wrong. Adding oil to pasta is preventing the sauce and pasta from harmoniously mixing. Rinsing the cooked pasta under water does just the same. The starch on the surface contributes flavor and helps the sauce adhere. If you rinse the water, you rinse away the starch and flavors. So boil the pasta, then drain it (saving some of the cooking water), and then briefly cook it in the sauce with a splash of that reserved water. ;)
I'm pretty sure you are not supposed to add olive oil to al dente cooked pasta. Otherwise, the sauce you add to the pasta will have trouble sticking to the, now slippery, pasta. Also, since you've added the pasta to the actual sauce in the pan and continued to meld the flavours together, adding the olive oil to the noodles after they've been boiled seems kind of pointless since mixing them in the sauce, in a heated pan, will help divide the starchy noodles and coat each of them so that they separate. I may not be a chef, Byron, but I sure know how to cook and prepare simple pasta dishes.
I honestly appreciate your criticism, but I promise that my techniques are essentially failsafe. I've made every mistake known to man when it comes to pasta preparation. Thanks for your concern. ;)

Yum Yum! Just finished eating this recipe and Dynomite! Um made a slight change? I used Spanish Yellow Rice where I added diced tomatoes with chives with a dab of cayenne pepper in the rice! Yum Yum! Just finished eating this recipe and Dynomite! Um made a slight change? I used Spanish Yellow Rice where I added diced tomatoes with chives with a dab of cayenne pepper in the rice!

Very nice, love the plating idea, I've watched a few of your videos and put my own spin on them, made gorgonzola and garlic mashed potatoes to pair with and came out fantastic
