You could try to make several max level sentries then have one person to be bait and run as soon as they get chased they would run to the sentries and baiting the person to follow him to his own death

If your stuff is constantly dying as engie use the Frontier Justice and use the crits to stop pushes while you're rebuilding.

one of the single most fun ways to play engineer tf2 is to play like you have a mini sentry but with a level 2 or 3
this is my secret strategy to playing engie, I highly recommend it
it works way more often than it should
