Because snacks taste great when they’re split between two, but they taste even better when they’re made by two. Vada you waiting for?* Cooking time with better half: 18 minutes. Chef 1 Ingredients: 6-8 Garlic cloves 4-5 Green Chillies 3-4 Potatoes, Boiled, Mashed ¼ Cup Oil 1 tbsp Mustard Seeds ¼ Tsp Asafoetida 2 Sprig Curry Leaves ½ Tsp Turmeric Powder Salt To Taste 2 Tbsp Coriander Leaves, Chopped 1 Cup Gram Flour ½ Tsp Turmeric Powder ¼ Tsp Red Chilli Powder Salt To Taste Procedure: Heat a pan, add oil, mustard seeds, asafoetida, curry leaves, garlic green chilli crushed, turmeric powder, potatoes and mix well. Now add salt, coriander leaves and mix them well. Keep it aside to cool. To make the batter for the vadas, add gram flour, turmeric powder, red chilli powder, salt to taste and required water as per the consistency in a mixing bowl and mix well. Now make a medium size ball of potato mixture and dip them into the besan batter. Your job now is done. Hand over the vada balls to Chef 1 and you can rest while they work on the rest of the recipe. Chef 2 Ingredients: 2 Tbsp Oil ½ Cup Peanut 4-5 Garlic cloves ½ Cup Fried Besan Batter crumbs 2 Tbsp Red Chilli Powder Salt To Taste 5-6 slit green chillies, Oil For Frying Procedure: To make the chutney, heat a pan, add oil, peanut, garlic cloves, fried besan batter crumbs, red chilli powder, salt to taste mix well and transfer it to a grinder and coarsely grind it. If you and your better half can handle spice, slit green chillies and fry them to add them to the Vada Pav. If you do not enjoy too much spice, you can skip this step. It’s now time to fry the Vadas that Chef 1 has prepped. Fry them in medium hot oil until they are golden brown. Put the Vadas into Pavs and serve them with red chutney and chillies. Ranveer, I just love your recipes. Vada at home is different in Pune. I am from Pune. We add Lime Juice and more of Ginger and little less of Garlic in the Vada stuffing. I would also add some Lemon Juice and some fresh coriander leaves in the outer covering of Vada. It gives more sharp taste.
Thanks for the awesome recipes Ranveer! I am from Mumbai but have now settled in the USA and we make vada pav at home but without the mumbai pav it is not like back home! You get a million varieties of this type of pav but they are all miles away from Mumbai pav softness! I tried making at home following all possible recipes on the net but that too is no good so far! All such folks away from Mumbai will dil se bless you if you post a recipe just for mumbai pav 🙏🙏🙏🙏

I m upsc aspirant and i love sir's videos. Earlier i used to mock his cooking style. I used to think he shows off and does unnecessary things. Infact i never subscribed any channel becoz i was skeptic untill i felt strong desire to make paav bhaji. Sir ki recipe worked like a magic. Thank u sir. Now i admire his style and wd suggest him to use more facts and history. Knowing the history makes us feel more connected to the food 😊 🙏

Like our Ranveer boss said, vada, pav and chillies are from Portuguese, but we made an authentic Indian dish from these three ingredients called vada pav.

We didn't have a chilly but we have lots of other spices like garam masala
Black pepper was our main ingredient. Onions we had, we didn’t have tomatoes though.
