    A good harvest after two weeks of frost, Dave. We'll have to try doing this next year.

    I'm also in N.H. didn't know I could leave the beets in the ground this long. Good to know. As far as carrots, I can't grow carrots. Not sure what I'm doing wrong but just doesn't happen for me

      It was an experiment for me this year, and was really happy how it worked out. I've been doing it with carrots for years.
      Are you having poor germination with carrots? The seeds can definitely dry out super fast and not grow. you almost need to water twice a day to make sure they take.
      I've never tried, but some people use vermiculite to cover the seeds, rather than soil. it holds water pretty well.
