I’m currently in high school in Wisconsin, and I feel like I don’t have a lot of friends. Cooking has really helped me cope with my loneliness and I feel like you have really helped me for the past few years. Thank you
Aww I'm glad to hear that Spencer :) . You know what, life gets SO much better after High School! And I say that as someone who was also pretty lonely in HS too! But I have to say looking back on that experience, I think going through period of loneliness in life makes us more empathetic as people. Everyone at some point should experience it so that as they move through life they become kinder, gentler people because they know what it feels like. So maybe this is just your time for learning that :) But really HS is such a blip on the radar screen of life (it's hard to think about that now when you are IN it and it's your whole life) but trust me the years ahead will be your best years and you will look back on these days and kinda laugh a little bit :) . So hang in there, keep cooking! It's what really helped me, I never felt lonely when I was cooking, and look where it led :) Follow your dreams, they always know the way :)

Yikes!) it was also one of the most introspective. It's when I really realized how much joy came from cooking and nurturing others. It may have been a simple pasta dish and a $6.00 bottle of wine, but having friends over (even those I didn't know very well) pushed me to make connections that I still have to this day. I hope these days remain exciting for you and that you too make some fun connections that will add more comfort to your life when family is far :) DREAM BIG! xo

This was SO delicious, I'm going to make it again tomorrow! Instead of Italian seasoning I used some dried oregano and dried basil which was perfect. I didn't want to go through the trouble of making bechamel so I just added a little heavy cream to the sauce and cooked it for a few seconds. So glad to have a new use for sundried tomatoes, thanks Beth!
Oh yeah they are so yummy whirled up and turned into a sort of pesto :) You could also reserve a few before whiling in blender for some larger pieces too. That would also be great!

The inviting relaxed feeling you have created sitting in front of the lovely bay window is a pro's touch. How you're in focus and the background isn't brings another cool level of interest, but when I saw how nonchalantly you cut back and forth to the kitchen while in real time (your mouth is saying the words) describe it all so succinctly from the living room; I had to write. Pantry Pasta! 😂 that’s a good name for it. I always do something similar but didn’t think much of it. I was throwing together ingredients i keep and i come up with something very delicious! I found myself keeping certain ingredients so I can continue to replicate what I had improvised.
