the crossbow thing definitely feels more like "how many achievements can you get with a single **right click**, but that's an interesting idea in it's own right!

At the start you can see that he has the roof made out of ancient debris (also blast proof) so my guess is that after the first portal incident he replaced the roof with debris and the showcase is done much later
For the ender dragon, maybe if mob griefing is off, then observer where the torches spawn in. If you move the ghast chamber into a deep dark biome where a skulk catalyst is, the XP could trigger "It Spreads" If you have thorns kill a raid captain in one area for "Voluntarily Exile". You can prepare it to be at 1 HP beforehand. Or you can also have a raid with only one raider left (vindicator preferably cause melee) and again with thorns, get "Hero of the Villager".
I would argue that holding right click would actually be HALF an input, but that's a whole other story that would require explaining parallel universes so I'm happy with what you went with

the ender dragon hitting you could be detected by a calibrated sculk sensor, specifically level 7 being getting hit and level 15 being the ender dragon dying. Also, would it be possible to get monsters hunted (kill every hostile mob) with the thorns strat? It'd be really hard but it might be doable. Plus with the thorns strat, I think both voluntary exile and hero of the village should be possible.
piercing is definitely more useful than multishot because it can hit potentially an unlimited number of mobs. using it to activate the whole contraption (which, btw, could be a target block instead of a button for bullseye) you could then just retract the block with a piston and take the arrow on a whole wild ride where it earns advancements for your

More on crossbow -- you could get the piercing ones by shooting a single piercing arrow, then having a piston move the block the arrow is on, and then use slime block pistons to push the arrow into 2 phantoms
you can have a preexisting arrow from the player, move it with a piston when pressing the button to get the arrow achievements with the button instead of a crossbow. also, you can put an observer on the end stone beneath the rim of the exit portal to detect the dragon death since the fountain regenerates when she dies
I like this challenge and my suggestion is, you can make your machine in a village and after killing the raid captain with an arrow, you can try to kill an evoker to get a totem of undying and then fall to "die" and get the "Postmortal" achievement/advancement.
If you were to add a cross-section of tripwire hooks in the end, would you be able to use that as a way to detect the xp that the dragon drops upon its death, giving you a way continue the mechanism.
Can't you put the enderdragon in by using the spawning of the portal back to the overworld as your trigger? I.e. don't do it with a respawned dragon, but with the original one. Alternately, killing it spawns the next portal going outside - one of those gateways - which should be detectable. Perhaps by putting a mob there that gets deleted, or a bit of redstone wire that gets destroyed or some such.

Btw you can have thorns on all armor pieces, the effect stacks
When the ender dragon dies, you can use a light-weight pressure plate to detect the xp he drops.

You can’t get we need to go deeper and the end because you have to build everything in the nether and in the end.
