- Many people think when the universe was born that 3 types of chocolate were created. Milk, Dark, and white... but what if I told you out of the void came another? I present to you Ruby Chocolate! This is our first time using Ruby chocolate and we think it's going to be a real contender in our chocolatey lineup. Find out what we think of it, and how we plan to use it!

I’ve tried ruby chocolate it’s not that great, it’s pretty tart. Normal chocolate is way better. (Just my opinion)

The red velvet cake relies on the cocoa for flavor. Ruby chocolate isn’t really chocolate & would not give you the needed flavor profile.
@GoBravesATL ruby chocolate is real chocolate. It isn't artificially colored or flavored. It's the color of the coco bean. White chocolate isn't exactly real chocolate, but ruby chocolate is.

This reminded me of when my grandfather and i made chocolate candies from scratch when i was a little kid.
I dont quite remember the recipe, but i remember getting really excited when the liquid chocolate started to cool, and became more like a dough/putty, and when we put it on the wax paper, and set it in the fridge, i was 100% sure it would come out soft, and somewhat dough like, but it came out hard and had this wonderful 'snap' to it when we broke it.
I really needed that warm feeling today, i lost my grandfather when i was 16, nearly 14 years ago now, and this time of year, i always miss him more.
This year for Thanksgiving, i have been practicing his recipes for various pies, and will be presenting them to the family for our big dinner.
Someone may get stabbed over the last slice of apple pie, but it will be a glorious day.
Update: I had to search up what ruby chocolate was and a chocolate expert literally said
“If I were to describe the flavor it’s white chocolate raspberry”

In Barcelona I got some really nice ruby chocolate. It was so good!!!
The aroma is different than raspberry, I think it's closer to redcurrant.

*A personal description* 😄
The chocolate is very confusing in a way. It has a lot of overlapping flavors that I want to describe very detailed. At first the flavor starts with a semi-sweet milk chocolate, then there is a hint of raspberry, and then there’s a mixture of white chocolate like taste and also other berry like flavors. The aftertaste leaves a coffee creamer like flavor or if you’ve ever tasted Nido, it taste like that. Overall, the flavor is very distinct but to fairly simply describe it, *it’s a milk chocolate with berry hints.*
It’s not a bad flavor tbh my ranking on all the four chocolates is the following
1st- Drak Chocolate
2nd- *Ruby* Chocolate 😳
3rd- Milk Chocolate
4th- w h i t e 🤢

You keep mentioning berries. There's no berry in this chocolate and it doesn't taste of berries either. No berry whatsoever. If you think it tastes like it then someone surely put that in your head.

I lOVE Callebaut chocolate. It's the only one I ever use when making my own confections at home. Its so easy to temper. I haven't tried the ruby chocolate yet but it looks lovely. I hope its a great success for you. Lee x

from what I know, ruby chocolate is more fruity and tart because it isn't fermented as hot or as long as regular cocoa. The farmers typically ferment the fruit and bean of the cocoa pod before selling, the fermentation is very important for the chocolate flavor, and since ruby chocolate is fermented less it keeps the original flavor of the fruit.
Now I want that Ruby Chocolate bar to make shavings for my hot chocolate.... 🤤

After trying the ruby chocolate, I can't believe that there's not a "fruit" flavor added. It's that tangy! It's really different and fun, and very creamy. I'm so glad i got to try it!

This is really eerie. A coworker asked me last week if I had ever tried this chocolate. I told her I hadn't even heard of it. I got a bar of this a year or so ago, it has an awesomely fruity chocolate flavor that's hard to describe, I usually just like dark chocolate but this stuff is really good.

Kathryn McCartney I got a bar at Natural Grocers last tear or the year before on Valentine's special they do every year. it was from the Chocolove brand in a regular bar. The color in this video looks pretty accurate on my phone to what I saw, and it tastes really good, like light chocolate with tart notes like strawberry or cherry.

I figured it would just be white chocolate with strawberry/cherry added.. but nothing's extracted?.. Ruby chocolate is actually my fave. I used to love Ritter Sports strawberry yogurt filled chocolate bars and ruby has a similar taste. I think it would work well as the coating for a boysenberry choc top.

I try to keep it on hand always, eat a bit before bed or when I'm stressed.
My husband was born in the neighbourhood where Callebaut chocolates was born and made. The whole village smelled of chocolate! I used this Ruby for chocolate lollipops as a favor for the birth of our third granddaughter.I make a bar what you call a bark with dried cranberries, freese dried strawberries and raspberries, lovely green pistachios, dried rose petals and some gold luster powder! They are wonderful!

I tried some ruby chocolate before and I'm not a big fan of it. I've never been a fan of fruit and chocolate together and the ruby is just so fruity that it's jarring for me.

if youre curious of what it tastes like, imagine the first time you compared dark choc (bitter) to milk choc (very sweet). ruby cocoa beans are bitter but fruity. just like goji berries if you've ever had those before. mix that with chocolate and you get a slice of heaven (in my opinion). my boyfriend hates it though.

I first had Ruby Chocolate about a year ago when I got hold of some Nestlé's KitKats done in the Ruby, must say it was love at first bite, so smooth and creamy as well as being slightly fruity, with this pandemic don't see it very often but when I do I pick some up and stash it away for when I fancy a bit.

Southern Mommy of Three it's still pretty new, I just tried it last year or the year before, chocolove bar from Natural Grocers. It's a very nice flavor, definitely fruity but still chocolatey. I looked up videos about it and everything was very recent so it's pretty new compared to most foods.
