    Ingredients for the pasta sauce:
    Ingredients:
    - 2 cups of tomatoes (preferably cherry tomatoes but others work fine too)
    - 3/4 cup of cashews
    - 2 peaches or nectarines
    - 5 garlic cloves
    - 1 small red onion or 1-2 shallots
    Additional:
    - olive oil
    - Salt & pepper
    - 1 cup pasta water (used after baking to blend)
    - (vegan) parmesan cheese or nutritional yeast (can also be added to the blended sauce for a cheesy flavor)
    To add more protein simply top it with your protein of choice - I love to add some ground vegan minced meat seasoned with italian herbs, salt & pepper or vegan sausage.
    Put everything into a baking dish, add a generous amount of olive oil, season with salt & pepper then bake in the oven for about 30 minutes at 180C/356F until slightly browned. Stir 1-2 times during the baking process. Transfer the baked ingredients to a pot and blend with an immersion blender and about 1 cup of pasta water. Season to taste with salt & pepper and top off with some fresh herbs and parmesan cheese.
