I made a similar recipe last week, but microwaved the sweet potato a bit prior to adding to the pot - in order to reduce the time needed on the stove. I also added chucks of carrots and celery to add a variety of flavors, textures, and nutrients.

an easy swap out that doesn't change this seasonal flavor profile too much is dice butternut squash in place of sweet potato It has similar anti-oxidants with lower glycemic numbers though lower in protein and fiber content. You can even often find it frozen.

And, if any of your followers have a dairy allergy like me, VioLife Cheddar Shreds are the best tasting non-dairy cheese to top off the chili.
It's so good, it tastes like it must have required a lot of effort, but it didn't. Kudos for not requiring lots of ingredients that folks don't normally have in the house.

Here's a recipe I like for Vegna Chili 3-Bean Chili 1 onion, chopped 1 green or red bell pepper 2 cloves garlic ½ cup dry red wine 1 14.5 oz. can diced tomatoes 1 15 oz. can each black beans, dark red kidney beans, and great northern or pinto beans, drained and rinsed 4 teaspoons chili powder 1 teaspoon each cumin, oregano, and basil ½ teaspoon ground black pepper 2 teaspoons molasses green or red onions, chopped In a skillet with a little oil, sauté onion until golden, then add bell pepper and cook until caramelized. Add garlic and cook a little. Add spices and cook 1 min. Add tomatoes and cook 15 min. or more. Add remaining ingredients except green/red onions. Bring to a boil, reduce heat and simmer 30 minutes or longer, stirring occasionally. Serve with rice, topping with green/red onions, and optionally avocado and cilantro leaves.

The recipe is great and I thank you but please try not to drain away all the goodness of the beans. Most canned vegetables/beans do not contain added salt. A lot of people do drain and it’s really such a waste of all their goodness 🌷🇬🇧🌷 Maria
Oh, I’m thinking the exact opposite when it comes to can vegetables! I’m not sure where you shop but I’m hard-pressed a lot of times to find canned with no sodium. And I think those tomatoes came from Whole Foods

Yes! Although it’s slightly different (but nothing that would drastically change the recipe!)
Here's a recipe I like for Vegna Chili
