My Go-To Vegan "Cheese" Sauce (Shreddable!)

  • My extra speedy vegan “queso” is my go to vegan “cheese” recipe. One pot, 15 minutes, and just a few pantry staples is all you need for this warm dip, mac & cheese sauce, or cheesy drizzle. PLUS… you can freeze it and SHRED IT!

    Ingredients: Vegan “Queso” (makes 295ml)
    1 ½ tbsp vegan butter
    2 cloves garlic (minced)
    ½ hot red chilli pepper, deseeded and sliced (or green chiles for a more traditional version)
    ⅛ cup (16 g) all-purpose flour
    1 ¼ cup (296 ml) unsweetened plant milk
    ⅛ cup (10 g) nutritional yeast
    ¼ tsp salt
    ¼ tsp turmeric, optional (for deeper colour)
    pinch of black pepper, optional (for better absorption of the turmeric!)

      A chest freezer! So exciting! Hahaha we’ve never had enough room to have a second freezer but I’m looking forward to that day 😜 have fun filling it! I actually haven’t used the frozen queso on pizza but I have drizzled the warm sauce on. Let me know how you like it & I’ll have to make a pizza soon and try it!     Yummy 😋 vegan cheese sauce Kathryn and I don't use cheese in my vegan cheese sauce. I have tried carrot and white beans (cannellini) with soya milk (other plant based alternatives are suitable). Jeremy's channel is awesome just like TastyThriftyTimely. I am having a day off from a video today but will have one up on Wednesday. Love 🥰 the video and love 💕 Kathryn & ❤ Bryan.

      Yes I know Jeremy has a veg based cheese sauce and I’m sure it’s delicious! Your version sounds great. I’ve used leftover squash before and made versions from tofu. There are so many options! I’ll stay tuned for your video on Wednesday! Thank you for watching as always 🥰

    I am curious, what sort of camera set-up do you and Bryan have? It's very steady, allows a lot of movement, etc; is it just handheld? Always looks amazing.

      Haha thank you Matt! We just recently got a gimble so Bryan’s done the last few videos with it. Still getting used to it but it will allow for steadier movement than before. He was always just handheld before and some shots are done on a tripod. Glad you like the banter 😜

      @@TastyThriftyTimely Very '40s "Thin Man" movie. 😀I can see a script about two socialites getting invited to parties because they bring great vegan cooking and solve mysteries along the way being a treat!
      So, Bryan's basically got his own Steadicam, now? 🙂Just hope not having the gimble before wasn't driving him nuts when trying to get the shot right and have a speed-up or slow-down look right in the edit. You generally have a pre-planned shot list, for these sort of things? If you told me Bryan did, I would not be surprised.

      Haha ya his back will be saved a little more with this set up now. We definitely have a bit of a method to follow with these videos now. I script them and know what we need to shoot and Bryan always has great ideas about how to execute 👍🏼

      Hmm I don’t think this version would work without butter or another fat in its place because it’s a roux. I would suggest blending silken or soft tofu with the nutritional yeast, garlic, chillies, and turmeric. That will give you a pourable cheesy sauce that is much lower in fat and higher in good stuff too. Otherwise blending sweet potato, squash or carrots with some plant milk and those other ingredients will give you a tasty sauce too. Let me know what you end up trying!

    Looks good ; may I suggest replacing vegan butter with coconut oil and the flour for potato starch to get less of a roux flavour ?

      I’ve never cooked with potato starch actually but it sounds like that would work and I’ll have to try it 👍🏼 I haven’t tried this with coconut oil but again that seems like it could work. I find that as long as the sauce comes to a low boil and simmers for a few minutes the starch flavour goes away. I’ll have to try potato starch and see the difference. Thanks 👍🏼

      Dredge, fry, coat in spices and oil. Toss on a slice of bread with a pickle or two or seven or ten...

    Can you use other types of flour if gluten free?

      I have tried it with 1:1 gluten free baking powder and an added teaspoon of arrowroot starch. My sister also said she tried it with 1:1 gluten free flour and a teaspoon of added xanthan gum and that worked for her as well. Let me know if you give it a try! As long as you add some extra starch into the mixture it should thicken!
