Looks absolutely delicious! We tried this recipe with smaller pumpkin and ground beef. The baked pumpkin and the stuffing came out really good! We changed the spices for our taste a little, put thyme also, more pepper. Yes, it takes some time, but a good, healthy taste and the whole family satisfaction is worthy to cook this dish!
I made this with a few changes. apple sausage roasted fennel wild rice sweet onion dried cranberries chopped pecans sage nutmeg in 2 sugar pumpkin. omg its delicious!
I had thought smaller sugar pumpkins were preferred for roasting because they are entirely eatable. Is the outer skin on this larger pumpkin eatable? Still, this looks like a great recipe.
Yes the skin is edible. Also, a fairytale pumpkin is preferable over a pie pumpkin. The flavor of winter squash comes through far better with the fairytale pumpkins.
Can you eat the skin or do you peel it off? I'd line to use the recipe as an appetizer but using Little tiny pumpkins.... Can people EAT the entire pumpkin?

We are grain free. Would riced cauliflower work in place of the long grain rice? Looks delish
