I agree trying fat free thick plain greek yogurt. Adding a egg white or pinch of cream tartar might help it hold together better also. Not come apart(be thick) also feta instead. I saw cooking it 1st putting olive oil around it was better then putting stuffing in and oven for last 15 minutes. Hmmm. I would definitely thicken it up his at the end to runny. Add egg white even oat fiber to thicken without calories.
Chef, another note, around this area everyone tosses their pumpkins after Halloween. Such a shame. Pumpkin soup, baked pumpkin, pumpkin pie & this great recipe you posted! Never could understand why they would do that.
Interesting that this video comes up. I’m already planning a stuffed pumpkin dish for a dinner coming up. Mine will not be vegetarian however. Mine is a mix of wild rice, brown rice (cooked in quail stock), quail, mushrooms, walnuts, onions, garlic, herbs and cream.
