I just made her empanadas a few days ago and they were BOMB! My fiance and kids loved them as did I 🤗😋 this is what I'm trying next! Shes the best and her food is easy, delicious and amazing! Shes my go to all the time never lets us down💓
I've never seen potato tacos with so much stuff on them. You could eat one and be stuffed. I make mine with the cheese and potatoes inside, adding salsa, lettuce and toppings before eating. I think it's great to combine the carnitas with the potato. Maybe I will try these. Another great recipe. Thank you for sharing so many great recipes. 👍

I love crispy potato tacos. Great job on explaining how to make homemade stuffed crispy tacos. They look amazing. However, I definitely want to taste the potatoes. So, I would skip the beans and carnitas. I made some today with queso chihuahua melting cheese. I Topped them with salsa verde and crema. So incredibly good and hard to stop eating them.
Is it me or does Claudia have those strong Mexican hands that don’t get burned?! I’ve never seen her flinch from the heat of oil or pot handles! Like those tacos were straight out of the oil and she touched them with her hand! Wow!

I just made this recipe today except I used carne molida, and man they came out sooooo delicious and so I finally learned how to make the masa! The salsa was delicious and spicy too.. it complimented the tacos perfectly!!! Yay! 4 recipes down... many more to do!
