The pin bones do not come out easily from a fresh fish. If the fish is 3 days old or more the pin bones come out easily. It is best to wait for a fresh caught salmon to be filleted for at least 2 days for this and other reasons.
Non commercial filleting. We pro filetters use never that slow and complicated technique. Filleting a salmon of that size boneless must happen less than 40 seconds.

Why cut off the head? I never cut off the head. Pro tip, just a slit in the skin near the tail part of the fillet. You can hook it with your finger.
