  • Paneer Butter Masala is a classic Indian dish. Paneer is Indian cottage cheese. Making it in instant pot is always a breeze. It requires just a few ingredients and is so simple yet so tasty, it has one secret ingredient that makes it super rich and creamy. Serve this Paneer Butter Masala with roti, naan, or pulao.     If you are lactose intolerance or vegan here are the alternatives,
    1. You can use flavorless oil or vegan butter instead of regular butter
    2. You can use tofu or chicken
    3. Use coconut milk instead of cream and milk
    STORE AND FREEZE: Store this butter paneer or curry base in the fridge for 3-4 days or freeze it up to 3 months. You can freeze it as a single serving so that it is easy to thaw it.

    Ingredients:
    Paneer - 300 Gms
    Butter - 4 Tbsp
    Onion - 2 medium size
    Tomato - 3 medium size
    Salt - 1 Tsp
    Cashew Nuts - 1/4 Cup
    Chili powder or Cayenne pepper- 1 or 1/2 Tsp (or to taste)
    Kashmiri Chili Powder or paprika- 1 Tbsp (Optional for natural color)
    Water - 1/4 Cup
    Garam Masala - 1 Tsp
    Kasuri Methi- 1 tbsp (Crushed) (Optional)
    Cilantro / Coriander Leaves
    Unsweetened Khoya - 50 Gms/1.7 oz (Optional)
    Milk - 3 Tbsp
    Cream - 2 Tbsp
    Sugar - 1 Tsp
    Instructions:
    · To the inner pot add onion, tomato, salt, chili powder or cayenne pepper, Kashmiri chilly powder or paprika, cashews, water.
    · Close the lid and make sure that the vent is in the sealing position.
    · Cook for 4 minutes and do NPR for 10 minutes and release the remaining pressure.
    · Grind them into a paste and also grind khoya and milk separately.
    · Select sauté mode add butter, heavy cream, khoya paste, sugar, paneer, garam masala, methi leaves, and coriander leaves. Mix it all together. Sauté for a minute. Cancel the sauté mode. Close the lid and let it sit for 5 minutes.
    · Serve it hot. Enjoy it with rice, roti, jeera rice, or naan.

      I usually do 5 minutes. It depends on what you cook. If you are cooking vegetables you can cook for 2 to 3 minutes.
