A super-simple version of carrot cupcakes!
This is a very, very simple carrot cupcake that just needs to be mixed without whipping the eggs.
It's super convenient because there's no whipping!!

Eggs: 2ea (one egg weighs about 62g)
Earth Sugar: 90g
salt: 1g
Vegetable Oil: 80g
Soft flour: 130g
Baking Powder: 2g
Cinnamon powder: 2g
Carrot: 140g
Walnuts: 50g
Cream Cheese: 300g
Sugar: 48g
Milk: 12g
1. Add earth sugar and salt to vegetable oil and mix.
2. Crack 2 eggs and mix.
3. Add carrots and walnuts and mix.
4. Add soft flour, baking powder, and cinnamon powder and mix
Put it in a pastry bag.
5. Squeeze into a muffin tin. If you divide it into 7 pieces and squeeze it, it's perfect.
Bake for 20 minutes at 6.180°C.
7. As soon as you take it out of the oven, give it a pounding shock, take it out and cool it on a cooling rack.
8. After loosening the cream cheese, add sugar and mix, then add milk and mix to finish.
(I tried xylose sugar. It was fine because the particles were fine ^^)
9. Put it in a pastry bag and decorate it.
10. If it is difficult to decorate the dog, you can finish it by squeezing it in a circle with a round tip.
✔ For cream cheese, I used Eloy Cream Cheese.
Since Elroy Cream Cheese is a bit soft, I did not take it out to room temperature and used it straight from the refrigerator.
✔ Roast walnuts in a frying pan without oil over low heat for about 10 minutes.
✔ Carrots form water when grated on a grater, so it is better to use a food processor or cut them yourself.
If water is formed on the grater, squeeze out the water and use it.
