Instapot version was a big hit over the jarred sauces I've been using. Not sure I want to bust this out and set the bar even higher. :) I can almost smell that spice fond. Just a tip, I had to look up a recipe for garam masala because I didn't have it on hand. If you are making these recipes, you likely have everything you need to mix up your own in a pinch.
Yeah, I don't include a recipe for garam masala because it's so widely varied and personal. From my understanding, every Indian family has their own take on it that's been tweaked by generations of cooks. My only real advice is to find (or make) one that you like and run with it.
